My youngest turned two yesterday. I can’t even believe it. I was flipping through photos of the day he was born, thanks to the Timehop app, and just can’t even fathom the last two years. So much has happened, and it has flown, even I feel like a different person. It’s been a busy couple of years, that’s for sure.
Even this month has flown by. I had lots of grand plans for the holidays, but all of a sudden we’re six days out and only half of what I wanted to do, got done. It may have also been because I really took it easy this month and basically read tons of books and watched tons of Christmas movies snuggling with my kiddies, so I can’t be tooooo mad.
But even still, Christmas should be at least a month longer! Then we could all do allll the things. Like make hundreds of cookie platters for every person that lives on our street and everyone I know. I’m sure lots of you did that this year, I totally slacked. Like I said, couch, kids, blankets, & Christmas movies..not complaining a bit though. I made lots of cookies though!
Like these caramel stuffed peanut butter and toffee cookies. super easy, only a ten minute chill time, (while your oven heats up!), soft and melt-in-your-mouth delicious! I know sometimes people get thrown off by the caramels, because they harden up after they cool, but I simply pop them in the microwave for 6-8 seconds, and voila, soft and gooey perfection again!
