I was flipping through photos of the day he was born, thanks to the Timehop app, and just can’t even fathom the last two years. So much has happened, and it has flown, even I feel like a different person. It’s been a busy couple of years, that’s for sure.

I had lots of grand plans for the holidays, but all of a sudden we’re six days out and only half of what I wanted to do, got done. It may have also been because I really took it easy this month and basically read tons of books and watched tons of Christmas movies snuggling with my kiddies, so I can’t be tooooo mad.

Like make hundreds of cookie platters for every person that lives on our street and everyone I know. I’m sure lots of you did that this year, I totally slacked. Like I said, couch, kids, blankets, & Christmas movies..not complaining a bit though. I made lots of cookies though!

I know sometimes people get thrown off by the caramels, because they harden up after they cool, but I simply pop them in the microwave for 6-8 seconds, and voila, soft and gooey perfection again!

Caramel Stuffed Tofee Peanut Butter Cookies

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 20-22 Cookies

A soft peanut butter and toffee cookie, stuffed with caramel and drizzled with dark chocolate! Melt in your mouth delicious!

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 egg
  • 3/4 cup peanut butter
  • 1 teaspoon vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup toffee bits
  • 10-12 kraft caramels, cut in half
  • melted chocolate for drizzling (optional)

Directions

  1. In a stand mixer, fitted with the paddle attachment, cream together the butter and sugars until smooth
  2. Beat in the egg, vanilla, and peanut butter until creamy.
  3. Add the flour, baking soda, and salt, and mix until just combined, being sure to scrap down the sides.
  4. Stir in the toffee bits
  5. Place in the fridge for about ten minutes while you preheat the oven to 350° and line baking sheets with parchment paper. (Great time to slice your caramels in half too!)
  6. Scoop out about 1 1/2-2 TB cookie dough and split in half. Roll each half into a ball, place a halved piece of caramel in the center of one balll, top with the other half, and roll together into a ball. Place on baking sheets about two inches apart, Repeat with remaining dough.
  7. Bake for 9-11 minutes. Rest for 2-3 minutes before transferring to cookie sheet to cool. If drizzling with chocolate, wait about ten minutes before doing so. Enjoy!
