My obsession with Cranberries has been ridiculous.

Don’t be surprised…or mad, if you see maybe see a few more recipes involving cranberries. I just can’t help it. They’re so delicious, beautifully red, can be sweet or tart, and oh my goodness they have so many uses in sweet dishes, savory dishes, cocktails, mock-tails ;), decoration…and oh so much more!

Fresh Cranberries are so tart but I love their crunch and just find myself snacking on them throughout the day. Basically you can use cranberries in just about anything, and fresh is always best!

Kinda like these Cranberry White Chocolate Oat Cookies…ummm pretty close to the greatest cookie Ive had in awhile..I’m talking, scarfing them down for breakfast, lunch, and dinner, sharing only one or two, and devouring the entire batch myself…hey, I’m 8 1/2 months pregnant, I have no shame..nor do I feel guilty.Don’t judge.

The white chocolate is fabulously rich, paired up with the tart cranberries, the crispy outside, and soft chewy inside…these cookies are fabulous, and so perfect for this holiday season. Make them, try to share them, and you will be loved! 😉

Cranberry White Chocolate Oat Cookies

Cranberry White Chocolate Oat Cookies

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Yield: 21 cookies

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 3/4 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup old fashion oats
  • 1 cup fresh cranberries, chopped
  • 1/2 cup white chocolate chips

Directions

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper
  2. In the bowl of a stand mixer, fitted with the paddle attachment, cream the butter.
  3. Add both the white and brown sugars and mix until fluffy
  4. Add the egg and vanilla, mixing well.
  5. Sift in the flour, baking powder, and salt, add the oats and mix until just combined.
  6. Mix in the chopped cranberries and white chocolate.
  7. Drop spoonful's of dough onto the lined cookie sheet 2 inches apart
  8. Pop in the oven and bake for 8-10 minutes.
  9. Remove and allow the cookies to cool on the pan for a few minutes before transferring to a wire cooling rack.
