We got to grill and sit outside yesterday. In January. It was fantastic and beautiful. You can’t be doing that in New England in January. In fact, they were getting a snow storm and power-less days while we had 60 degrees and sunshine..I’ll take it.

So maybe you’ve heard about the big game coming up in a couple weeks? The Patriots lost yesterday, and I have a VERY upset husband, so they won’t be going to the Superbowl, but it doesn’t mean we don’t watch and EAT!

If I’m being honest, unless the Pat’s are in it, all I really care about is the food. Sure I’ll watch, but mostly I just eat. Over the next couple of weeks leading up to the game, I’m going to be sharing all fantastic Superbowl worthy food, and a drink or two! (Because yes, the food is the best part!)

Starting with this fantastic Spicy Chicken Chili! From start to your mouth, it only takes 35 minutes! It’s so perfect, and so easy. It’s also all really healthy ingredients, so you can eat this one without any guilt..even dip in a few tortilla chips if you’d like!

It’s not overly Spicy, you won’t be breathing fire, (unless you want to add more heat, all the power to yah!), but it’s got a pretty good kick in there! It’s full of flavor and will fill you up. This Chili makes a great Superbowl food or weeknight dinner!

Spicy Chicken Chili (In 35 Minutes!)

Cook Time: 25 minutes

Total Time: 35 minutes

Yield: 6-8 Servings

Spicy Chicken Chili (In 35 Minutes!)

Totally healthy, but hearty Spicy Chicken Chili! Ready and at your table in 35 Minutes! Add even more heat if your palate can handle it!

Ingredients

  • 2 Tablespoons olive oil
  • 2 garlic cloves, minced
  • 1/2 cup chopped yellow onion
  • 1 pound ground chicken
  • 1/2 teaspoon salt
  • 1 Tablespoon plus 1/2 teaspoon cumin
  • 4 teaspoons chili powder
  • 1 green pepper, chopped
  • 1/2 jalapeno, minced
  • 28 ounce can crushed tomatoes
  • 1 cup chicken broth
  • 14 ounces kidney beans, drained and rinsed
  • 14 ounces pinto beans, drained and rinsed
  • (Toppings of choice: avocados, cheese, cilantro, sour cream, green onions)

Directions

  1. In a large pot heat the olive oil over medium-high heat.
  2. Add the onion and garlic, saute 2-3 minutes until fragrant.
  3. Add the ground chicken and cook through, stirring occasionally, about 5-6 minutes.
  4. Sprinkle in the salt, cumin, and chili powder, and stir in the green pepper and jalapeno.
  5. Pour in the crushed tomatoes, chicken broth, and the beans.
  6. Stir together and bring to a boil. Reduce heat, and simmer 15-20 minutes.
  7. Top with your favorite toppings and enjoy!
