Sweet Potato, Black Bean, and Ground Sirloin Chili

Sweet Potato, Black Bean, and Ground Sirloin Chili | Fabtastic Eats Sooo we’re Patriots fans. My husband is a super hard core Pat’s fan..like, been watching them since he was two, decks himself (& our kids) out in Pat’s gear every Sunday, LIVES for Sunday football, screams at the TV, ESPN obsessed, twitter sports follower, news reader, fantasty football player (x3 teams) etc. He’s a huuuge football fan, and if you follow football at all, you know that the Patriots haven’t exactly been playing up to par this year, much to my husbands, & all their fans, dismay. It’s been pretty dramatic around here.

My husband talks about not even being able to watch the Patriots play if Brady is gone. Friends, to put it into perspective…that’s 30 years of watching the Pats, loads of jerseys, and many days of lost voices from screaming for them…down the drain.

Regardless of how much my husband is struggling with football this season, it doesn’t change the food. Because if you’ve been reading along for any length of time, you know that as much as I love the excitement of the game, I live for game day eats!

Sweet Potato, Black Bean, and Ground Sirloin Chili | Fabtastic Eats Food is such an important element of any situation or get together, and football Sunday is one of the most fun days to eat! Chili is one of my favorites to make when I know there is going to be a big crowd, because not only is it easy, but it’s so quick to throw together, and it makes a ton! Our most favorite chili ever is enjoyed so many times throughout football season and the chillier months, that I can’t even keep track, but every once in awhile, we like to change it up and add a little flair! Like with Spicy Chicken Chili or this Sweet Potato, Black Bean, & Ground Sirloin Chili!

So much flavor, SO good for you, while simultaneously feeling and tasting indulgent. It’s hearty, comforting, filling, savory with a touch of sweet a little heat. This chili is one of our favorites!

Sweet Potato, Black Bean, and Ground Sirloin Chili | Fabtastic Eats

Sweet Potato, Black Bean, and Ground Sirloin Chili

Total Time: 1 hour, 15 minutes

Yield: Serves 6-8

Ingredients

  • 1 Tablespoon olive oil
  • 1 small yellow onion, diced (about 1/2 cup)
  • 3 garlic cloves, minced
  • 2 1/4 pounds ground sirloin
  • 1 large sweet potato, 3 cups chopped
  • 1-28 ounce can tomato sauce
  • 1 28 ounce can crushed tomatoes
  • 1 cup water
  • 1 large green pepper, chopped
  • 10 ounce jar fire roasted red peppers, drained and diced
  • 1-15 ounce cans low-sodium black beans
  • 1 1/2 Tablespoon cumin
  • 1 1/2 Tablespoons chili powder
  • 2 Tablespoons Worcestershire
  • 1 teaspoon red pepper flakes
  • 1 Tablespoon brown sugar

Directions

  1. Heat olive oil in a large pot over medium-high heat. Add the onions and saute for 4 minutes. Add the garlic, saute for an additional 1 minute.
  2. Stir in the ground sirloin, cook through.
  3. Add in the sweet potatoes, cook for 5 minutes, stirring occasionally.
  4. Add the tomato sauce, crushed tomatoes, water, green peppers, fire roasted peppers, and black beans.
  5. Stir in the cumin, chili powder, Worcestershire, red pepper flakes, and brown sugar.
  6. Stir occasionally until bubbling. Reduce heat and simmer for 30-40 minutes, until the sweet potatoes are fork tender, but not super soft.
  7. Top with your favorite toppings, we love sour cream, tortilla chips, and a sprinkle of cheese! Enjoy!
