It only makes sense that if I shared a healthy smoothie with you earlier in the week, that I now give you something to completely wipe it out. 😉 Enter Banana Cream Pie.

But not just any ol’ Banana Cream Pie. The crust is made from smashed Nutter Butters…and it is absolutely my favorite part of this pie. I think. Because then there is Peanut Butter Whipped Cream. And Chocolate, and some more crushed Nutter Butters…

..and well, we all know how great that combo goes together..like the sun in the summertime, February and skellies, after parties and tellies…anyone? Lets pretend I didn’t just quote a Mariah Carey Song, kay?

But in all seriousness, when Joanna from A Cup of Jo asked me to come up with a little spin on a classic no-bake dessert, I couldn’t say no. First, I love her blog..it’s in my reader and is definitely a daily read, and secondly, it was such a great concept and fun to brainstorm!

The post is on her blog too, but I’ve also listed the recipe here below and it’s totally worth the entire TWENTY minutes that it takes to throw this together. It’s such a great Summertime, backyard BBQ life, easy, mouthwatering dessert. You’ll be loved all around.

Peanut Butter Banana Cream Pie

Total Time: 20 minutes

Yield: 1-9" Pie

Crushed Nutter Butters as the Crust take the Classic Banana Cream Pie up a notch! Topped with Peanut Butter Whipped Cream and a drizzle of Chocolate and you won't be able to put down your spoon!

Ingredients

    The Crust
  • 26 Nutter Butter cookies
  • 4 tbsp. butter, melted
  • The Filling
  • 2 bananas, sliced about ¼” thick
  • 1 oz box vanilla pudding (prepared according to instructions on box—you will need cold milk)
  • 2 cups heavy cream
  • 2 tbsp. sugar
  • ½ tsp. vanilla
  • ¼ cup + 2 tbsp. peanut butter
  • 2 tbsp. mascarpone or cream cheese
  • chocolate syrup for drizzling (optional)

Directions

  1. Add all but two of the cookies to a gallon-sized ziplock bag, seal well. Using a rolling pin, mash the cookies until they have turned into crumbs.
  2. Add the crumbs to a medium sized bowl and drizzle in the melted butter. Toss to fully coat the crumbs. Pour into a 9” pie dish and begin spreading out the crumbs and pressing firmly along the bottom and up the sides of the pie pan to create your crust. Once firm, pop your crust in the freezer while you finish preparing the filling.
  3. Now make your vanilla pudding, according to the instructions on the box. I whisk together the contents of the box plus 2 cups of cold milk. It thickens within five minutes and is ready to go.
  4. Now to make your PB Frosting. In a large bowl, add the heavy cream, sugar and vanilla. Begin beating the mixture, either by hand or using an electric mixer. Once it begins to thicken, but isn’t completely whipped cream yet, add the peanut butter and mascarpone. Continue beating the whipped cream until stiff peaks form, then stop. You don’t want to overdo it.
  5. Now that everything has been prepped, remove your crust from the freezer and place the banana slices in an even layer covering the entire crust. Add the vanilla pudding next, evenly spreading it.
  6. Top with the peanut-butter whipped cream, using a rubber spatula to push the cream to the edges of the pie.
  7. If you’d like, drizzle with chocolate syrup, and crush the remaining two Nutter Butters on top.
  8. Store in the fridge until ready to serve. Enjoy!
