I knooooow it’s not to late for this pumpkin banana bread. I’m still going crazy for all things pumpkin. I just love the smell of the spice and the warm cozy feel of it all. It screams Fall and I am alllll for that! This bread is heaven, pure.heaven. I made two loafs in a 2 days last week and they were both gone within four days. All five of us couldn’t get enough!
My oldest loved it as an afternoon snack warmed up and topped with peanut butter, and the baby just walked around constantly with a piece in his hand. My husband and I would snack on it with our coffee and I loved it as a midday treat!
This bread is 100% whole wheat, no half & half junk here. There are no refined sugars, you can use either honey or pure maple syrup…we tried both and they’re equally delicious! I love all the treats this time of year and leading up to the holidays, but I love it even more when they’re healthy, SO TASTY that you wouldn’t know how light it really is, and something that you can enjoy without feeling guilty about it!

Ingredients
- 2 TB coconut oil, melted
- 1/4 cup unsweetened applesauce
- 1/2 cup honey (or pure maple syrup)
- 2 eggs
- 2 bananas, mashed
- 1/2 cup pure pumpkin
- 1/4 cup milk (I used almond milk)
- 1 teaspoon maple extract (or vanilla extract)
- 1 3/4 cup whole wheat pastry flour
- 1 teaspoon baking soda
- 1 TB pumpkin pie spice
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
Directions
- Preheat oven to 325º and grease bread pan.
- In a large bowl, whisk together the coconut oil, applesauce, and honey. Whisk in the eggs.
- Stir in the mashed bananas, pumpkin, milk and extract.
- Add the flour, baking soda, pumpkin pie spice, cinnamon, and nutmeg. Stir in until combined.
- Pour the batter into the greased pan, pop it in the oven and bake for 55-65 minutes, until a toothpick inserted in the middle comes out clean.
- Enjoy!
Notes
**If you wanted to make this all pumpkin, you can eliminate the banana and add an additional 1/2 cup of pumpkin. *I've tried it with both the honey, and the maple syrup, and both are equally delicious! *If you don't LOVE spiced bread, cut the cinnamon down to a 1/2 teaspoon. But this is spicy, warm, and cozy as is, and I guarantee you'll love it!
