Do you like peirogies? For as far back as I can remember, we’ve always had a peirogi party every December. It is one of our holiday traditions. We make a TON. Like seriously, enough for huge platters to go home with everyone. Our whole family (extended aunts, uncles, and cousins) get together, and we take turns, rolling out the dough, cutting, stuffing, pinching, boiling, sauteing, and of course eating! Boy do we eat A LOT of them.
Well, I was afraid we’d miss it this year, living in Missouri. But my mom is hosting it this year, tomorrow night! Eek! I wish I could explain to you my excitement, because I have a serious obsession with these. I’m pretty sure we eat them for days afterwards, breakfast, lunch and dinner..just SO good. I look forward to it every single year. I’ll try to take some pictures of the craziness for you if I can remember, but usually, I’m covered in flour!
Okay! White Chocolate Gingerbread Pancakes..you should make these THIS weekend, or xmas morning, I don’t care when, just doooo itttt. I love gingerbread so so much, but usually only make and eat it around the holidays. It’s one of my favorite holiday flavors though.
These pancakes are no exception. I know you’ll love them because they are full of sweet little white chocolate chips that pair perfect with the little bite of the gingerbread. They’re loaded with spices and flavor, and come together in a snap! You don’t even need maple syrup, but seriously, maple and gingerbread is another fantastic flavor combo! These pancakes are winner!

Ingredients
- 2 eggs
- 2 1/2 cups milk (I used 2% but use what you've got)
- 1/4 cup molasses
- 1 teaspoon vanilla
- 3 Tablespoons vegetable oil
- 1 cup brown sugar
- 2 teaspoons cinnamon
- 2 teaspoons ground ginger
- 1 teaspoon ground cloves
- 1 teaspoon nutmeg
- 1 1/2 cup all purpose flour
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup white chocolate chips, divided
- Cooking Spray
- Maple Syrup for drizzling
Directions
- In a large bowl, whisk together the eggs, milk and molasses for 1-2 minutes.
- Whisk in the vanilla, vegetable oil, and brown sugar until thoroughly mixed.
- Add the cinnamon, ginger, cloves, and nutmeg. Whisk together.
- Pour in the flours, sprinkle on the baking powder and salt and whisk until well combined.
- Preheat your griddle to medium or medium-high heat, depending how hot your stove gets.
- Completely spray the griddle with cooking spray.
- In about 1/4-1/3 cup increments, pour the batter onto the griddle. Allow it to cook for about 1 minute, before sprinkling a few white chocolate chips onto each pancake. Cook on one side until the edges start to look done and middle begins to bubble, about 2-3 minutes. Flip and cook for a remaining one minute. Repeat until batter is gone.
- Top with maple syrup if you desire and enjoy!
