I know next week is Thanksgiving, and most of you probably aren’t planning meals in anticipation for one of the biggest of the year, but I figured I’d still put together a meal plan, for those who don’t have Thanksgiving, and for those who don’t make a big deal about it. This year, it’s just going to be the four of us, so while I plan to make a turkey day dinner, it won’t be overflowing with leftovers. We still need to eat the other six nights of the week, right?

Creamy Pumpkin Barley with Sausage
This looks and sounds so comforting. Ill probably swap out the pumpkin for butternut squash because I have a lot that needs to be used, and we love it, but this sounds amazing with a crusty piece of bread!
Black Bean Butternut Sliders
I’ll probably make these full size burgers so that it’s a meal, but I know they’ll go over well in this house. My husbands going to love the chipotle ketchup!
