Since today is my birthday, I thought Id bring a drink with me to Happy Hour!
Clearly I’m still loving the Watermelon and Cucumber combo! If you haven’t jumped on the bandwagon after that awesome salad, than when better to do it than when there is booze involved? Exactly. So do it. Its awesome.
You know how when you eat really crappy you feel like you really need to workout hard the next day? Then the next day comes and you’re soooo unmotivated and lazy. Yah..that’s annoying. One more reason why I’ve been trying to eat a bit better. It makes me soooo sluggish.
I’m reading this book right now. Its funny. And honest. And straightforward. And I’m afraid it’s going to turn me into a vegetarian. But lets be honest…I don’t know if I could ever give up big, fat, juicy, cheeseburgers. I’ll let you know when I’m done reading it.

I hate when I find something awesome on Pinterest and then the link is broken. Or it just brings you to the page where the picture was, so you have no idea how to do it or where to buy it. Its frustrating.
Sometimes I wish eggnog was sold year round..(even though I’d be sick of it so fast) so I could face plant into this for my birthday today. And no, I don’t want to make my own ‘nogg.
Could you make me these and bring them (or ship them) to me? I want them soo badly. I’m being to lazy to make them. I know.

My sons 2nd birthday is at the beginning of next month. Since we have so much going on with the wedding, we’re not having a big party like last year, but I still would love to make him this Mickey Mouse Cake! Hes obsessed. But I’ve never worked with fondant, and honestly, I’m kinda scared. Have you? Is it hard? Those people who do it, make it long so easyyy!
I got a sunburn this week. Its kind of awesome since it was only May 1st. But in reality, it hurts, and it gives me the chills, and I can’t have loose clothing that rubs all over it. Lame.
I’ve only attempted to make Macarons once. It was over a year ago. But I had bought books, and read and read and read about them first. So when they were an epic fail, I was so bummed out that I haven’t tried again since. I know they’re pesky little things and I should have gotten over it and tried again. But I didn’t. Until now. I saw these yesterday morning, and desperately want to make and devour them. I think I need to give those little babies a shot again. SOON.
Oh so if I haven’t already said it 40573 times..today is my birthday. I’m a 1/4 century old. It sounds old right? Well THIS makes me officially feel old too. Read through, it’ll give you a good smirk!

A light and refreshing Watermelon Cucumber Mint Cooler is a perfect skinny cocktail for these warm days!
Ingredients
- 4 cups cubed watermelon
- 2 cups cubed cucumber (about 1 large)
- 20 mint leaves
- 10 ounces of Gin
- Ice Cubes
Directions
- In a blender, combine the watermelon, cucumber, mint and about 6-7 ice cubes, blend until slushy.
- Pour into a sieve and strain out the liquid. It takes about 10 minutes and You should get around 2 cups.
- To make the drinks, combine 4-6 ounces of the watermelon liquid with 2 1/2 ounces of Gin.
- Stir. Toss in a few Ice cubes. Garnish with any additional fruit or mint leaves.
- Makes 4 drinks!Enjoy!
