Moving on..Veggie Taco Dip. We have been making and demolishing this simple yet, flavorful, somewhat healthy, incredible dip in our family for years. It has been made for every party in extra large quantities, and is always the first thing to go, without fail. It is so light and refreshing. Crunchy, yet creamy, slightly salty but still sweet from the peppers.
This Veggie Taco dip is soo simple to make. The most time consuming part is chopping all the veggies, but seriously, it is so worth it, I promise! It is a great lighter option compared to all the crazy cheesy and greasy dips that usually consist of a game day spread. Not that there is anything wrong with those 😉 but sometimes its nice to have the option of a lighter dip. This is it!
Ingredients
- 1-8 ounce package non-fat cream cheese
- 1-1 1/2 cups fat-free sour cream
- 2-1 ounce packages taco seasoning (OR 4-5 Tablespoons homemade taco seasoning)
- 1 large red bell pepper, chopped
- 1 large yellow bell pepper, chopped
- 1 large orange bell pepper, chopped
- 2 tomatoes, cubed
- Green onions, diced(optional)
- Black olives, minced (optional)
Directions
- In a large bowl, mix together the cream cheese, sour cream, and taco seasoning. (You can use it right away, but its even better if you pop it in the fridge for about an hour!)
- Spread the cream cheese mix onto a large platter.
- Sprinkle evenly across the top the red, yellow, and orange bell peppers, followed by the tomatoes.
- If using the green onions and olives sprinkle those on top.
- Serve up with a bowl of tortilla chips! Enjoy!
Notes
You'll notice in the ingredients list I said "1-1 1/2" cups of sour cream. You can mess around with it to reach your desired consistency, but I generally do a little more so its softer and easier to scoop..but some people have mentioned that they prefer it firmer! Add the sour cream until its where you like it..Also whether or not you use fat free or not makes a difference, since the fat free is more liquid-y than regular sour cream!
