Our favorite turkey bolognese! A healthy option served over your favorite pasta or veggie noodles!
I’m having a hard time getting into this New Year. Usually at the beginning of another year, I feel ready for a fresh start, ready to set goals, and go into the year with my fist in the air and guns blazing. This year, however, I’m not really feeling the difference between last year and this year. I mean, I know it’s always only been separated by a day, but in the past, it felt different, I felt different, not this year, it just all seems the same.
Which is a little frustrating. I want to get in the mindset of setting goals and accomplishing them, I want to feel productive and ready to take on a new year, but Im just not there yet, my brain is still in holiday mode, and here we are almost a week into the new year.
I’ve hardly spent any time at all in my kitchen the last few weeks, and I do mean any at all. I did make our favorite bolognese sauce though! We eat this one year round, over zucchini noodles, or spaghetti squash noodles, and sometimes just over good ol’ pasta. I generally just add ingredients until it tastes to my liking, but this time I figured I’d measure it out and share it with all of you!
This is a quick sauce to throw together, so tasty, and so easily modified. You can turn up the heat if you like it a little spicier, or tone it down. You can add bacon or pancetta if you’d like too, I generally don’t, just to try to keep it a little healthier, you can sub in some red wine for a bit of the diced tomatoes, there are loads of ways that I’ve changed this up, but this is my baseline sauce, and it’s so good as is!

Ingredients
- 1 yellow onion
- 4 medium carrots, washed and roughly chopped
- 3 celery sticks, washed and roughly chopped
- 4-5 garlic cloves
- 1/8 cup olive oil
- 2 pounds ground turkey
- 1 TB Italian seasoning
- 2 teaspoons oregano
- 1 1/2 teaspoons garlic powder
- 1 1/2 teaspoons salt
- 1 teaspoon crushed red pepper
- 1 teaspoon paprika
- 1/4 teaspoon black pepper
- 1 bay leaf
- 1 TB Worcestershire
- 1-28 oz can tomato sauce
- 2-15 ounce cans diced tomatoes
- 6 ounces tomato paste
- 1/2-1 cup freshly grated Parmesan
Directions
- In a food processor, combine the onion, carrots, celery, and garlic cloves. Pulse until it's no longer chunky, scraping down the sides as necessary.
- In a large pot, heat the olive oil over medium-high heat. Add the veggie mix and saute for 4-5 minutes. Stir in the ground turkey, increase heat to high, and cook until browned and cooked through.
- Stir in the Italian seasoning, oregano, garlic powder, salt, crushed red pepper, paprika, black pepper, and the bay leaf. Cook 2-3 minutes until fragrant.
- Add the Worcestershire, tomato sauce, diced tomatoes, and tomato paste. Bring to a boil, reduce heat to a medium-low and simmer from 30 minutes to 2 hours.
- Just before serving, stir in the Parmesan.
- Serve over spaghetti noodles, spaghetti squash, zucchini noodles, or whatever your heart desires! enjoy!
