I wish  could say that I’m kicking Mondays ass this morning, but like usual. It already got me.

Like every morning, my kids ask my husband if he “have to go to work today Dad?” and of course, 5 days out of the week it’s a ‘yes’. Then Saturday and Sunday come around and he can say ‘no’ and play, cuddle, and laugh with them all day. (He must be the more fun parent or something) THey’re over the moon ecstatic when he’s home.

Buuuut then there’s Monday. He has to leave and the waterworks start. I feel awful, and my oldest is pretty much used to it now. But my little baby (he’s 15 months…still my baby!), bawls his poor little eyes out. And then he doesn’t stop for little while.

So yah..that is how my Monday began!

Which means, I’m keeping it short, sweet and to the point today. Yay for you! 😉

Putting oats in smoothies isn’t a new thing. There are so many smoothie recipes in general that sometimes you see another, and groan a little inside. I know, they’re not hard. BUT sometimes when you find a flavor combo that is absolutely irresistible, you just HAVE to share it.

This smoothie is basically like a bowl of oatmeal but blended up. Don’t let that image freak you out. It’s amazing. I’ve been having one at least twice a week, so so good. It tastes like a big heaping glass of the tropics! It’s filling, full of fiber, and is so great for when you’re running late!

And before you ask, of course you could use regular milk, BUT it won’t taste as ‘tropical’…the coconut almond milk brings a TON of flavor to this one. SO..do with that what you may. Enjoy!

Tropical Coconut Oatmeal Smoothie

Total Time: 5 minutes

Yield: 1-8 ounce glass

Tropical Coconut Oatmeal Smoothie

Breakfast in a cup! Rolled oats, coconut, and frozen fruit make this incredibly tasty, quick, and easy Tropical Smoothie!

Ingredients

  • 1/2 cup old fashioned oats
  • 1 cup coconut almond milk
  • 1/4 of a banana
  • 1/2 cup frozen mango
  • 1/2 cup frozen pineapple
  • 1/4 teaspoon cinnamon
  • 1/4 cup coconut flakes
  • 1 Tablespoon honey (optional)

Directions

  1. Put the rolled oats in a blender and pulse until they're almost a powder.
  2. Add the milk and blend.
  3. Add the banana, mango, and pineapple. Blend until smooth.
  4. Sprinkle in the cinnamon, coconut flakes, and drizzle in the honey. Blend.
  5. Enjoy!
