My husband and I are so obsessed with Dexter. We’re flying through them. I can’t even handle how good it is..and I definitely can’t decide if I think Dexter is hot or not. Most of the time I lean towards not, but then sometimes, in the right light, I think yes. Except for his lips, always so white, or so blue. They look dead. Maybe they do that on purpose? Probably. Hey, did you know the Superbowl is on Sunday? Because I haven’t heard anybody talking about it or anything? 😉 Well, just to add to the over-abundance of already crazy game day eats out there, I’ve got a few more comin’ atcha this week…starting with these Chorizo Meatballs.
These meatballs are made with tequila and lime juice and an assortment of tasty spices, THEN drizzled (or dipped!) in a cheesy tequila-lime sauce. They’re the ultimate. We loved everything about them, and I know you will too. The meatballs on their own are mouthwatering-ly perfect, the boozy cheese sauce just takes it over.the.TOP.
 Let’s talk about the tequila for a second because I don’t want you thinking you’re sitting here getting all boozed up. No way. (Unless you want to? Then I suggest a Margarita!) The tequila cooks off, so they’re safe, but it just gives them SO much flavor. So don’t even think about leaving it out!
Add these to your game day spread, they’re fantastic. And I promiiiise, you’ll be so glad you did. If you want to keep the cheese sauce warm, just set it in a small crock-pot with a big bowl of meatballs next to them and a little bowl of toothpicks, and dip away! They’ll be gone before you know it!
Mouthwatering Chorizo Meatballs, drizzled with a creamy cheddar sauce, all infused with Tequila-Lime!
Ingredients
- 3 links of chorizo, casings removed
- 1 pound ground pork
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/8 cup silver tequila
- 1 Tablespoons fresh lime juice
- 1/3 cup panko
- 2 Tablespoons olive oil
- 3 Tablespoons butter
- 3 Tablespoons flour
- 1 cup milk
- 2 Tablespoons tequila
- 1 Tablespoon lime juice
- 4 ounces extra sharp cheddar, freshly shredded
- salt and pepper
Directions
- In a large bowl combine the chorizo and ground pork. Using your hands, really mix the two together so that the chorizo is pretty evenly distributed.
- Add the paprika, cumin, garlic powder, salt, tequila, lime juice, and panko. Once again using your hands, mix well.
- Roll into 1" balls. You'll get right about 30 Meatballs.
- For cooking the meatballs, you can either place them in the oven at 400° for 15-20 minutes or in a skillet warmed with olive oil over medium-high heat, for about 5-6 minutes on each side. Once cooked set aside.
- To make the cheese sauce, melt the butter over medium heat until it's sizzling. Add the flour and whisk together.
- Pour in the milk, tequila, and lime juice, whisking constantly. After about 5 minutes, when the milk starts to warm, add the shredded cheddar cheese and stir until completely melted.
- Crack a little salt and pepper to taste.
- Drizzle the cheese over the meatballs, or pour it in a bowl, with toothpicks and the meatballs on the side for dipping. Enjoy!
