I feel like I am such a creature of habit about so many things, and others I love spontaneity! But mostly I love my routine. I’m someone who pretty much orders the exact same thing at a restaurant, once I’ve found a dish there that I love, I hardly ever veer off.

I’m a coffee lover, and frilly drink drinker, but I hardly try any new flavors, I stick to what I know and love. Same goes for my breakfasts every day. They’re always the same during the week, either a whole wheat English muffin with almond butter, chia, & banana, a bowl of granola with yogurt and berries, or a smoothie or smoothie bowl. Always one of those three things! Though when it comes to dinners, I prefer something new and exciting every night, (which could be why I’m not a huge fan of leftovers. ie; I won’t go near them…drives my husband bonkers!)

More often than not though, smoothies are involved in some part of my day, even if it doesn’t happen until the afternoon. My kids love them, I love them, they’re healthy, a great snack, perfect for post-workouts, and a great way to sneak in some extra fruit and veggies into my kids diets, which are currently overrun with freeze pops!

It’s so filling, loaded with spinach, berries, rolled oats, ground flax, it is perfectly sweet, and topped with crunchy granola (a must!), dried mangoes, though fresh would be just as fantastic here, bananas, some chia seeds…but the best part, you can work with what you’ve got on hand to make your own version of this healthy, filling, (I love when breakfast actually holds me over!), perfectly sweet breakfast!

Superfoods Smoothie Bowl

Total Time: 10 minutes

Yield: 1 large smoothie bowl

Ingredients

  • 1/4 cup old fashioned rolled oats
  • 1 cup fresh spinach
  • 1/2 banana
  • 1 cup cashew milk (or milk of choice)
  • 1 Tablespoon ground flax
  • 1 packet Zing
  • 1 cup frozen berries (I used a mix of mango and blueberries)
  • Toppings
  • 1/2 banana, sliced
  • 1/4-1/3 cup granola
  • 1 teaspoon chia seeds
  • 1/4 cup dried or fresh mango
  • drizzle of almond or cashew butter

Directions

  1. Add the oats to the blender, and blend until a powder forms, about 15-20 seconds.
  2. Add in the spinach, banana, cashew milk, flax, and Zing. Blend until smooth.
  3. Pour n the frozen berries and blend until creamy. Pour into a bowl and top with desired toppings. Enjoy!
