Sun-dried Tomato and Feta Focaccia | Fabtastic Eats This past weekend was the unofficial official last one of Summer. Why does it feel as though the minute labor day passes, the weather immediately changes. The air is suddenly a little crisper, nights are already shorter, jeans and boots are being yanked out, and people put away the white pants. <<– That one I just can’t get behind. I’m all about white year round…it’s called ‘winter white’ now. 😉

But before labor day even approached this year, people were already going ga-ga for the pumpkin! Why do we rush these things? Time already goes soooooo fast. My little man will be two in 3 1/2 months. How did that happen? (Insert hands on head emoji)

Regardless of trying to hold onto summer, my efforts now are futile. I can see the fall loving all around me. But I may have one or two more summery recipes for you, I mean the weather’s not that cold yet!

Sun-dried Tomato and Feta Focaccia | Fabtastic Eats Today though, an awesome Focaccia is gracing your screen! This is a year round one for me. I love it in the Summer, and we enjoy it equally as much in the winter! Some nights, a loaf of focaccia, a block of cheese, and a bottle of red wine are considered dinner for my husband and I. We tryyy to limit those to at-home date nights, where he claims he gets points for watching movies like Divergent, Veronica Mars, or The Fault in Our Stars. Not sure where he gets these ideas.

I’ve made this a couple times, the first I accidentally used sun-dried tomatoes that weren’t in oil, so they crisped up a little more than I would like, fortunately, my husband loves that flavor, but I would recommend using the ones in oil for this! Enjoy!

Sun-dried Tomato and Feta Focaccia

Prep Time: 20 minutes

Cook Time: 15 minutes

Total Time: 1 hour, 35 minutes

Yield: Serves 4-6

Tangy Feta and Sun-dried Tomatoes, along with fresh basil, make this Focaccia absolutely wonderful!

Ingredients

  • 1 cup warm water
  • 2 1/4 teaspoons active dry yeast
  • 1 Tablespoon honey
  • 1 1/2 cups all purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 Tablespoon kosher salt
  • 1 teaspoon garlic powder
  • 2 Tablespoon olive oil, divided
  • 1/2 cup sundried tomatoes in oil, chopped
  • 1/3 cup crumbled feta
  • 10-12 leaves fresh basil, julianne
  • 2 ounces fontina

Directions

  1. Stir together the water, yeast, and honey. Set aside for 5-10 minutes until it poofs.
  2. In the bowl of a stand mixer fitted with the dough attachment, combine the flours, salt, garlic powder, and 1 TB olive oil.
  3. Add the yeast mixture and knead for 5-8 minutes on medium speed, scrape down as necessary.
  4. Grease a large bowl with remaining 1 TB oil, and add the ball of dough. Cover with a towel, and place in a draft-free place to rise for one hour.
  5. Preheat oven to 425°. Punch down dough. Line a baking sheet with parchment paper.
  6. Press the dough out onto the baking sheet, into a full rectangle, using your fingers, and leaving dents in the dough as you go.
  7. Layer with a sprinkling of fontina, the sun-dried tomatoes, feta, and basil. Bake for 12-15 minutes.
  8. Remove from the oven and enjoy!
