Ahh I love this time of year! The weather is almost perfect, but its still nice enough to be outside from morning until night! It’s grilling AND s’more season! (Oh, P.S. If you don’t already smear your S’mores with Peanut Butter or Cookie Butter, then you are completely missing out..do it. You’ll thank me later!

If you haven’t guessed, I had a wonderful weekend! Two gorgeous days, two looong walk/runs, hours outside with my kids, lots of delicious food and sweets and it’s also now officially my birthday week! We still get those right? Entire weeks worth of a birthday? I’m turning 25, but I’m not to old for that yet! (I hope!) This time of year makes me so happy..I love New England is the Spring and Summer..its perfect!

Oh oh..if you’ve been following along for any length of time, you know that when my hubs graduates in a couple weeks, he commissions, and will officially be on active duty. We’re moving to Missouri in September for just five months for training, but more importantly we’ve been waiting to find out where we will be stationed for 2-3 years following that. Drum roll please….We are heading to Joint Base Lewis-McChord in Washington next February!! We couldn’t be more ecstatic! I know that won’t always be the feeling when we get PCS’d but I have always wanted to live on the West Coast, and I can’t think of anywhere Id rather be than right outside of Seattle! It is going to be an adventure for sure!

Okay, okay..I’ve waited long enough to talk about my new most favorite appetizer! The second I took my first bite of these Sun-dried Tomato and Whipped Feta Crostini’s, I started sending pictures to people and repeated “Holy Crap” after every.single.bite. These Crostini’s are absolutely out of this world. I honestly don’t even know what to say, the complexity of the flavors on your palate is so completely perfect. The sweet and salty jam, against the creamy, salty, tangy, whipped feta, all on top of a crispy baguette, ugh there aren’t enough words.

I’m telling you, seriously do this. Mothers Day is coming up..these are perfect for that. But do we really need an excuse to make something so completely amazing? No. This jam, that feta..ugh, I can’t wait to combine it again.

Sun-Dried Tomato Jam and Whipped Feta Crostini

Sun-Dried Tomato Jam and Whipped Feta Crostini

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Yield: 1 Baguette\\

Sweet and Salty Sun-dried Tomato Jam paired with creamy, salty, tangy Whipped Feta on top of a crispy Baguette makes for one of the most flavorful and perfect appetizers!

Ingredients

    Sun-dried Tomato Jam
  • 1 cup dry, Sun-dried Tomatoes, sliced thin
  • 2 Tablespoons Pompeian Grapeseed Oil (plus extra for brushing)
  • 2 Shallots, thinly sliced
  • 1 garlic clove, minced
  • 2 Tablespoons Honey
  • 1/4 cup red wine vinegar
  • 1/2 cup reduced-sodium chicken broth
  • 3/4 cup water
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Whipped Feta
  • 6 ounces fat-free Feta, freshly crumbled
  • 1 1/2 ounces reduced-fat cream cheese
  • 1 French Baguette

Directions

    Sun-dried Tomato Jam
  1. In a medium sized saucepan over medium heat, warm the grapeseed oil.
  2. Toss in the sun-dried tomatoes and shallots. Cook until softened, about 4-6 minutes.
  3. Stir in the garlic, cook for about a minute.
  4. Add the honey, vinegar, chicken broth, water, thyme, salt, and pepper. Stir.
  5. Bring to a boil, reduce heat, cover and simmer for about 30-35 minutes.
  6. Remove the cover and continue simmering for about 10 minutes, until most of the liquid has reduced down.
  7. Remove from heat, pour into a food processor, and quickly pulse 2-3 times. (You don't want to puree it, you just want to mix it slightly better. Reference the before and after photo in the post!)
  8. Pour into a bowl and set aside.
  9. Whipped Feta
  10. In the bowl of a food processor, pulse 2-3 times, until the feta is in small crumbled pieces.
  11. Add the cream cheese, and pulse until smooth, about 20-30 seconds. You may need to scrape down the sides once or twice.
  12. Scoop into a bowl and set aside.
  13. Crostini
  14. Preheat oven to 400 degrees
  15. Slice your baguette in 1/2 inch pieces and brush each piece with grapeseed oil.
  16. Pop in the oven and toast until golden brown, about 3-4 minutes, flip them over and continue toasting for another 2-3 minutes.
  17. Remove from the oven, cool slightly.
  18. Smear on some whipped Feta, top with the Sun-dried Tomato Jam and Enjoy!
