A heavenly Blueberry Cobbler taken up a notch with a wonderful crunchy streusel topping!
We did it. We took our kids camping this past weekend. It was…..interesting. My two year old was in 7th heaven..running, playing, swimming, jumping, sliding, sand, dirt, fires, the whole nine yards, he loved it. He was easy and having a blast. It made it all worth it. Because taking an 8 month old who just wants to move, and move fast, somewhere where he really can’t, is HARD. He puts everything in his mouth, and moves like lightning. Its really hard, read: impossible, to put him on the ground in dirt, and its even harder to just hold him when hes constantly trying to nose dive to the floor. A LOT of beer was drunk.
I’m glad we did it, and my husband was over the moon…telling me on the way home he wants to do that every Summer…we’ll see about that one. But For him and for my two year old, it was worth it. Ill stick to ‘glamping’ in the future thank you very much. Such a diva sometimes. I know…its his new fav nickname for me…I think I probably complained a little bit to much. Sorry babe.
Any how, Summer is almost over. tear. smile. Can’t decide how I feel about it yet. I’m totally going to miss all my favorite Summer fruits. Blueberries being a big one. Blueberry Cobbler is such a quick and easy dessert when you know you’re having company! It takes literally 15 minutes to throw together and tastes like heaven.
Sprinkle on some streusel, and you’ve got yourself a mighty fine “fancy” tasting dessert. Because everything is better with Streusel…butter, sugar..whats not to love? Use up those blueberries, take another bite of Summer…soon enough you’ll be counting down the days until the start of it again. 😉
A heavenly Blueberry Cobbler taken up a notch with a wonderful crunchy streusel topping!
Ingredients
- 4 cups fresh blueberries
- 3/4 cup white sugar, divided
- Zest of a lemon
- 1/4 cup lemon juice
- 1 teaspoon cinnamon, divided
- 2/3 cup all purpose flour
- 1/2 teaspoon baking powder
- 1/8 teaspoon salt
- 1/2 cup butter, softened
- 1 egg
- 1 teaspoon vanilla
- 4 Tablespoons flour
- 5 Tablespoons brown sugar
- 1/2 teaspoon cinnamon
- 2 Tablespoons cold butter
Directions
- Preheat oven to 375 degrees.
- In a medium sized bowl toss the blueberries, 1/4 cup sugar, lemon juice, and 1/2 teaspoon cinnamon.
- In a large bowl cream together the butter and remaining sugar. Beat in egg, vanilla, and lemon zest.
- Slowly sift in the flour, baking powder, salt, and 1/2 teaspoon cinnamon. Fold together until mixed.
- Pour the blueberries in a 12 x 6 (or 8x8) sized pan, spread evenly.
- Drop spoonful's of the batter across the top of the blueberries.
- To make the streusel, using a fork or a food processor, blend together the flour, brown sugar, cinnamon, and butter until crumbly.
- Sprinkle across the top of the batter and blueberries.
- Pop in the oven for 35-40 minutes until golden brown.
- Serve with whipped cream or vanilla ice cream and enjoy!
