We’re going on a last minute mini-moon! 😀 I am so excited! Since we won’t get the chance to go on a real honeymoon until next year, we’re taking the opportunity this weekend to take a trip up the coast of Maine for a few days for some shopping, wineries, beaches, cocktails, dancing, hiking, and fun! We were planning on taking the boys camping, when my mom offered to watch them for the weekend. My husband got an extra few days off and it all fell into place! We haven’t been away from our boys for more than 8 hours, so this will be a really nice, relaxing mini vaca! I’m SURE Ill be checking in all day long…good thing my mom understands how neurotic I can be! 😉
People come from all over to visit Maine in the Summer. They rant and rave about the mountains, the beaches, resorts, B&B’s, the food, and the amazing drive up the coastline. Well, I’ve been living in Maine for 13 years, and Ive only gone north of Portland a few times just driving to Canada. I’ve never checked out all that Maine has to offer, and I figured since we’re leaving in just a few short months, now is as better time than any! I can’t wait for a few days away with my hubs, but I can promise you, I will miss my babes like CRAZY!!!
I can’t believe this year is half over! Times a-flyin’..there is still so much to look forward to this year! Summer feels like it is just starting finally! This Strawberry & Peach Gucamole, tastes like Summer! It screams it actually! We absolutely love it! The sweet, ripe fruit, combined with creamy avocado, salty feta, and a little spicy cayenne…ahh heaven! It has such fantastic flavor! It is such a wonderful twist on my favorite classic guac! (This Roasted Garlic & Bacon Guacamole is not to be missed either!!!) All of these guac’s are perfect for any Summer BBQ..or just a snack, or lunch! 😉 People will go crazy over them!

Deliciously Sweet, Ripened Fruit and Salty Feta add incredible flavor and a fantastic twist to this marvelous Guacamole!
Ingredients
- 1 cup chopped fresh strawberries
- 1 ripe peach, chopped
- 1/4 cup minced white onion
- 1/4 cup feta cheese
- 2 avocados
- 1 lime, juiced
- salt and pepper
- 1/8-1/4 teaspoon cayenne (optional)
Directions
- In a large bowl, add together the strawberries, peaches, onion, feta, and avocados.
- Mash together using a potato masher, fork, or smasher of choice.
- Squeeze in the lime juice, a dash of salt and pepper, and cayenne if you choose!
- Stir it all together and serve with tortilla chips
