MY SOON-TO-BE HUBBY BOUGHT ME A JUICER TODAY! haha I’m so excited! I’ve been begging for one forever! Ive seen all theses amazing juice recipes popping up everywhere and read so much about the health benefits of it, and I was so excited when he came home with one! 😀

We started juicing pretty much immediately! We made one veggie juice with carrots, cucumber, fresh spinach, and an apple! I was so scared to try it! hah I was completely shocked at how good it really was! We also tried a delicious fruit one with strawberries, mango, oranges, kiwi, and apples, which my son was IN LOVE with! Whenever I put it down he kept grabbing for more! It makes me so happy that he likes everything..the least pickiest eater ever!

Now! About our MOST FAVORITE pizza to date! THIS Spinoccoli Pizza! When we lived in Maryland, Drew was bar tending at UNO’s and would bring home their deep dish pan spinoccoli pizza sometimes, and it is to.die.for! But lets face it, deep dish isn’t that fab for the waistline, and going out to dinner isn’t always practical..SO we made this pizza one night…let me tell you…this is probably one of the best pizza I have ever had! AND it tastes so similar to the one we got at UNO’s!

At first bite, (and throughout the remainder of dinner), I just kept hearing “mmmmm..this is so good” “omg, I can’t believe how much they taste alike” “Ohh you have to make this again” Yes my friends, my fiance, the “I don’t really like pizza” guy, can’t rave about this one enough! AND I happen to agree! I may, or may not, have had two more slices that night, after he went to bed while catching up on Army Wives..maybe?! 😉

P.S. I use the same Pizza Crust basically for all my pizzas! I make a bunch one weekend and freeze them! THIS if the most perfect pizza dough I have tried! (Which is why Ive been sticking with it for months!) Lauren definitely did all the hard work for us..shes not joking when she says its fail proof! It has yet to let me down!

Spinoccoli Pizza

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: 1-12\" Pizza

Spinoccoli Pizza

Ingredients

  • 1 lb pizza dough, homemade or store bought
  • 2 tablespoons Olive Oil
  • 1 tablespoon Minced Garlic
  • 1/2 cup Pecorino Romano
  • 1 cup broccoli florets
  • 1 cup fresh spinach
  • 1 cup strained diced tomatoes
  • 1/2 cup mozzarella
  • 1/2 cup cheddar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Cornmeal (For sliding the pizza onto the stone)

Directions

  1. *Make sure your crust has been sitting at room temperature for at least one hour before you start handling it.
  2. Preheat your oven to 500 with the pizza stone inside of it.
  3. Roll out your pizza dough to a 12 inch round.
  4. Brush the entire crust with olive oil, then spread the minced garlic all over.
  5. Once your oven and stone have heated up, for at least 20 minutes, pop the pizza crust in the oven for a pre-bake for about 4-5 minutes.
  6. Remove from the oven and assemble.
  7. Begin by sprinkling on the pecorino romano cheese evenly across the crust.
  8. Top with diced tomatoes, broccoli florets and fresh spinach.
  9. Sprinkle on the remaining mozzarella and cheddar cheeses evenly
  10. Finish with the dried basil and oregano. (Tip: If you rub it between your hands while sprinkling on the pizza it brings out there flavors much stronger!)
  11. Bake in the oven for another 8-10 minutes, until cheeses are melted and crust is golden brown!
