Do you know what I find a pain in the you-know-what, every single day? Lunchtime. Not only do I have to stop whatever it is we’re doing, or wherever we’re going to think about it, but then I have to make it.

Usually whatever leftovers we had from the night before, my husband takes to work with him, so that’s out. And I generally always make the kids and I something different. Especially since my kids are such snackers..alllllll day long.

I just find making lunch a general nuiscance. It usually goes something like this..open all the cabinets, stare, walk away, stare into the fridge, close it, look through the pantry, back to the cabinets, then the fridge, over to the pantry again, aaaannnd repeat. About five times before I have any semblance of an idea.

I mean sure I could just grab a bag of chips and call it lunch. But A, not very substantial, and B, I don’t keep chips in my house. Well, except tortilla chips. So that’s a wash. I snack on fruit all day long, so I usually want something on the savory side, but I don’t want to make a huge mess because I probably just cleaned the one from breakfast up, and Im sure to make a huge one at dinner, not to mention whatever Im working on for this ol’ blog that day.

Yah, so lunch. Pain in my rear. oh oh! and my kids like variety, so I have to always have a few things on rotation while adding in new ideas! Phew. Can’t they just live off Popsicles all Summer? Yum!

Recently, when it was actually raining, and I wanted a good lunch, I made this open faced, souped-up, BLT! It’s more like a BAART..Bacon, Arugula, Avocado, Ricotta, Tomato, oh and Cheddar, and a Cornmeal Waffle base, and a drizzle of honey.

It’s the most trashed up BLT I’ve ever made or had, and I loved every single bite of it. And you will too. Pinky promise. Enjoy!

‘Souped-Up’ BLT

Yield: Makes 8-10 Open faced Sandwiches

‘Souped-Up’ BLT

A Cheddar-Cornmeal Waffle smeared with ricotta and cheddar cheese, topped with avocado, tomato, bacon, arugula, and finished with a drizzle of honey, Soup-up your typical BLT!

Ingredients

    Cornmeal Waffles
  • 2 eggs
  • 1 1/2 cups milk (I used 2%)
  • 1 cup cornmeal
  • 1 cup whole wheat flour
  • 1 Tablespoon baking powder
  • 1/2 cup cheddar cheese
  • salt and pepper
  • Toppings
  • 1 1/4 cups ricotta
  • 1 1/4 cups cheddar
  • salt and pepper
  • 1 avocado sliced thin
  • 2 tomatoes, sliced
  • 2 cups fresh arugula
  • 15-20 slices bacon, cooked until crispy
  • honey for drizzling (optional)

Directions

  1. To make the waffles, combine the eggs, milk, cornmeal, flour, baking powder, cheese, and a dash of salt and pepper in a bowl. Mix together.
  2. Cook according to your waffle irons instructions.
  3. In a medium sized bowl, combine the ricotta, cheddar, and a dash of salt and pepper.
  4. To assemble, I served these using only half of a large round waffle, they're pretty filling! So begin by smearing on some of the ricotta mixture, layer with 4-5 thin slices of avocado, 2 pieces of bacon, a couple slices of tomato, and top with about 1/2 cup of arugala. Drizzle with honey if desired and enjoy!
