One of the biggest reasons I look forward to Football season is all.of.the.FOOD! There is always so much greatness! Game food is freakin’ delicious! And there is so many crazy ideas out there, you never have to repeat the same thing twice! This past weekend we made these amazing soft pretzel bites, pumpkin beer mac & cheese, hot wings, and pumpkin white chocolate cookies! (recipe to come soon!) Both the pretzel bites and the cookies flew off the plate quicker than anything Ive ever seen! De.vou.red. And we made a double batch of the beer mac & cheese and it was completely gone by the end of the day. I love game day food!
Ive got my eye on some amazing looking eats for upcoming weekends!! Check out this kahlua baked brie…umm yum! I’ve been dyiiing to try that one! Or this white pizza dip..I made this toasted almond parmesan dip for this past superbowl and Ill definitely make it again..it was awesome!
I could live off dips and appetizers…give me that any day over full meals..I love snacking on five different things in front of me. Appetizers/Dips/Snacky things=Perfection aka Alainas hands all up in it. Kinda like these soft pretzel bites.
I made them Sunday morning, and between four of us they were half gone before everyone got here..and the only reason there were any left is because my fiance kept swatting all of our hands away. They were PERFECT. I love soft pretzels..I get them often..whenever I walk by the stand in the mall, I drool and make some unheard of sound..I get teased every time for it..but this place has amazing soft pretzels with a side of white chocolate ice soft serve. The combo of sweet and salty melts my heart..its so great. And so.are.these.PRETZEL BITES!
They’re just like mall pretzels, soft and chewy on the inside with a lightly golden browned, firm, salty outside! Dipped in a little honey mustard sauce and you won’t be able to keep your hands out either! They are TOTALLY worth the little bit of extra time that goes into them! Please add these to your next game day menu..or maybe tonight for dinner. I won’t judge!
Ingredients
- 1 1/2 cups warm water
- 1 Tablespoon sugar
- 2 teaspoons kosher salt, plus extra for sprinkling
- 2 1/4 teaspoons active dry yeast
- 4 1/2 cups flour
- 4 Tablespoons unsalted butter, melted
- 10 cups water
- 2/3 cups baking soda
- 1 large egg beaten with 1 Tablespoon water
Directions
- In the bowl of a stand mixer, add the water, sugar, salt, and yeast. Whisk it together.
- Allow it to sit for 5-10 minutes until foamy.
- Fitted with the dough hook, add the melted butter and flour, mix to combine.
- Knead on medium speed for 5-6 minutes until smooth to the touch and not sticky.
- Lightly grease the bowl, add the dough back in, cover with plastic wrap and allow it to rise for one hour or until it doubles in size.
- In a large pot, bring the water and baking soda to a boil.
- Preheat the oven to 450 degrees and line a couple baking sheets with parchment paper.
- On a lightly oil surface, punch down the dough and separate into 8-10 pieces.
- Roll into ropes about 1/2 inch thick. Cut bite sizes about one inch long.
- Add them to the boiling water in batches for 30 seconds at a time.
- With a slotted spoon, remove them to the parchment paper
- Brush each piece with the egg and water mixture and sprinkle with kosher salt.
- Pop in the oven for 10-12 minutes, or until golden brown.
- Repeat until you've used up all your dough, dip and enjoy!
