Sooo a few years ago I ordered a box of Biscoff cookies offline because I couldn’t get them anywhere in stores…to say I was obsessed with them would be an understatement..The box contained 400 cookies…I kept them in my room, under my bed..so not only did I not have to share…but I ate every.last.one.by.myself. Yah.
When I was at Trader Joe’s a few weeks ago, I came across a bottle that was called “Cookie Butter”. Say no more. It was in my cart without a second thought. Then I got home, I tasted it. “Holy shit…” is what I was repeating… “This tastes just like my favorite.cookies.ever...”you know, the ones I bought 400 of and totally didn’t share. There was like a bajillion things I wanted to make with it, but I didn’t want to waste my whole jar…I should have gone back that day and bought them out of what was left of their Cookie Butter, because since then…they don’t have it!! 🙁 (I’m already on a list so whenever they get this particular wine in….(my favorite ever.) I get an email or text….)maybe I should do that with cookie butter…ha!
Anyhoo…the day you get your hands on this absolute perfection..you MUST make these Snicker-doodle Sandwiches…because not only are snicker-doodles, like, uh-mazing, but stuffed with cookie butter in between..ummm..it doesn’t get much better. These are sweet, soft, chewy, delicious, mouth watering, and will be gone before you’ll get the chance to share. SO GOOD. Make them. YUM!!
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 3/4 cup sugar
- 2 large eggs, beaten
- 2 3/4 cups flour
- 2 teaspoons cream of tartar (if you don't have it, lemon juice is a good replacement)
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons sugar
- 3 teaspoons cinnamon
- 1 cup Cookie Butter
- 3-4 Tablespoons half and half
Directions
- Preheat your oven to 350 degrees. Line baking sheet with parchment paper
- Mix butter, 3/4 cups sugar, and eggs thoroughly, until creamy.
- In a separate bowl, combine flour, cream of tartar, baking soda, and salt. Whisk together.
- Gradually blend dry ingredients into wet ingredients. Mix until just combined.
- Refrigerate mixture for about 15 minutes.
- Meanwhile combine 3 Tablespoons sugar ans cinnamon.
- Using a small cookie scoop, (about 1 inch balls) scoop dough and roll in the cinnamon-sugar mixture.
- Place on cookie sheet and cook 8-10 minutes.
- Once done, remove from pan onto a cooling rack immediately.
- Combine cookie butter and cream in a bowl until well mixed. Add a little extra cream if necessary.
- Once the cookies are cooled to room temperature, either pipe or spread cookie butter mixture over one and lightly push a second one down on top.
- Enjoy!!
Notes
This is my favorite Snicker doodle Recipe! Even if you're not making the sandwiches, this cookie is phenomenal! If you're making just the cookies, you'll want to add an additional 3/4 cup of sugar. (I eliminated it because of the sweetness of the cookie butter) Definitely make these Snicker doodles!!
