Are you a TV junkie? I sound so pathetic, I never used to be. But I also used to have much more of a life. Since we had kids, we hardly ever go out anymore. Don’t get me wrong, I wouldn’t change it for anything in the entire world, but now those 3-5 nights a week that we used to go out, we fill with tv dramas, movies, and blog work. I’m pretty happy with that.

This is probably going to sound silly, but in the past, our cable company only allowed us to DVR 2 shows at once, but we had to be watching one of them. Now, I can DVR up to FIVE shows at a time. For someone TV-drama-obsessed like myself, this is like freaking Christmas. I’m pretty excited. It’s pathetic, I know, you don’t need to tell me.

But I need to tell you about these Sloppy Joe Lettuce Wraps. Whenever I think of Sloppy Joe’s, It Takes Two pops into my head. (Pleeeeease tell me I’m not the only one.) I must have watched that movie a million and one times when I was younger. I’m not exaggerating at all. I own all MK&A movies on VHS, yes, VHS. Holiday in the Sun was another favorite, so was Winning London. If I’m being honest, I loved them all. but I digress.

Sloppy Joe’s. We never make them, and I have no idea why, because these were fantastic. My husband came in the door, and tried one, claiming “I don’t even like sloppy joe’s, but these are amazing.” He wasn’t kidding. They take 30 minutes, so they’re the perfect weeknight meal. I used ground turkey, so they’re much healthier than the usual culprits, but still just as tasty and just as filling. Do it, your family will never know the difference!

Sloppy Joe Lettuce Wraps

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 6-8 Lettuce Wraps

Hearty, but light, healthy, and easy, 30 Minute Sloppy Joe Lettuce Wraps!

Ingredients

  • 1 Tablespoon olive oil
  • 1 small red onion, chopped (about 1 cup)
  • 1 celery stalk, chopped small
  • 1/4 teaspoon garlic powder
  • salt and pepper
  • 1 pound lean ground turkey
  • 6 ounce can tomato paste
  • 1 cup chicken broth
  • 1 Tablespoon apple cider vinegar
  • 2 Tablespoons brown sugar
  • 3 Tablespoons Worcestershire
  • 2 1/2 teaspoons chili powder
  • 1 teaspoon dry mustard
  • Romaine or your favorite lettuce leaves (butter lettuce is another great one!)
  • 4 ounces shredded Butterkase Cheese (Cheddar would be great too!)

Directions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the onion and celery. Sprinkle with garlic powder, and a couple cracks of salt and pepper.
  3. Cook for 3-5 minutes, until the onion starts to become translucent, and add the ground turkey.
  4. Grind it up in the pan using a wooden spoon, and cook all the way through, about 5-8 minutes. Drain any excess fat if desired. Reduce heat to medium-low.
  5. Add the tomato paste, vinegar, brown sugar, and Worcestershire sauce. Toss to thoroughly coat.
  6. Sprinkle in the chili powder and dry mustard. Mix well.
  7. Cover and cook until most of the liquid has been absorbed, about 3-5 minutes.
  8. Stir and spoon onto lettuce wraps. Sprinkle with a little cheese and serve. Enjoy!
