Guys! It’s Thanksgiving week! Can you believe it’s already here?! I love it..this really is the most wonderful time of the year! I know so many people have already put up their trees and started with Christmas decorations..wowsahs! We haven’t gone that far yet, but we’ve started listening to Christmas music, burning xmas candles, watching xmas movies, (Love Actually, my favorite!) and sipped on a few rum and noggs this weekend! Definitely my favorite time of year!
We’re heading up Wednesday, to a friends house for Thanksgiving, and some of our best friends, who were in our wedding, and are stationed in Oklahoma, are trucking up here for a few days to spend the holiday with us too! I am soooo excited! Being in the military, living so far from everyone, we never know when we’ll see people again, so this last minute surprise of them joining us for the holiday, couldn’t be more perfect!
I’m hoping to head up to Maine this coming weekend too for a couple weeks. Sadly my husband won’t be able to join us, he’s not on vacation until December 21st, but I’m taking my kids and we’re going to visit our families, and have a 1st birthday party for my littlest man..I still cannot even believe, or handle the fact that he’s already going to be one. I really feel like we just brought him home!! What a super fast year it has been! gah!
Now that you know my calendar for the next week, shall we talk about these sweet potatoes? 😛 You probably think I’m throwing some last minute Turkey day side dish at you! While these would certainly make a welcomed addition at any thanksgiving table, this was definitely not my intent..but it does fall kind of perfect, huh?!
These sweet potatoes are a perfect side dish to any meal, we’ve had them as a side to a roasted chicken, I’ve tossed them in a salad for some vitamins and flavor, and we’ve been known to just eat them by the bowlful as a snack. My entire family loves them, and I know you will too, because they’re both sweet and savory, and pretty healthy…and we all love that combo!
Earthy sage and tangy balsamic vinegar, take these sweet potatoes up a notch! They are a fantastic side dish to any meal, and even taste great tossed in a salad!
Ingredients
- 4-5 Tablespoons extra light olive oil
- 3 garlic cloves, minced
- 20 fresh sage leaves, minced
- 4 large sweet potatoes, peeled and chopped (about 10 cups)
- 1/4 teaspoon cracked pepper
- 3/4 teaspoon salt
- 1 teaspoon dried thyme
- 1/4 cup balsamic vinegar
- balsamic glaze for drizzling (optional)
Directions
- In a skillet over medium-high heat, add the olive oil and heat up until shimmering.
- Toss in the minced garlic and sage and saute until golden brown, about 2 minutes.
- Add the chopped sweet potatoes, and toss to fully coat with the garlic sage mixture.(It may seem like its overflowing from the pan, but they do shrink down, so it gets easier to stir.)
- Cover and cook for about 10 minutes, scraping the bottom often so they don't stick.
- Add the pepper, salt, and dried thyme. Toss to fully coat the sweet potatoes.
- Cover again, still tossing occasionally and scraping the bottom, for about 10 minutes until the sweet potatoes are almost softened.
- In the last 5-10 minutes, push a small section of the sweet potatoes out of the way (like in the photo above in the post) and pour in the balsamic vinegar, let it heat up for about 30 seconds before tossing it in with all of the sweet potatoes. Cover if necessary for an additional 5 minutes.
- This is completely optional, but if you'd like an even stronger balsamic flavor, drizzle with a balsamic glaze just before serving. Enjoy!
