What a mouthful, but in the absolute, best, possible way. Mac & Cheese is the ultimate comfort food..and I am all about comfort and cozy around the holidays. Give me some eggnog & give me some mac and cheese…though not together. I don’t think.

Skillet Bacon and Roasted Garlic Mac and Cheese

Prep Time: 1 hour

Cook Time: 30 minutes

Total Time: 1 hour, 30 minutes

Yield: Serves 4-6

Caramelly roasted garlic, crispy bacon, and three cheeses, makes this Mac and Cheese creamy, perfection!

Ingredients

  • 2 heads of garlic
  • 1 pound pasta, cooked al dente
  • 5 slices bacon
  • 4 Tablespoons olive oil, divided
  • 1 leek, sliced thin
  • 4 Tablespoons flour
  • 3 cups milk
  • 8 ounces fontina
  • 5 ounces sharp cheddar
  • 4 ounces Parmesan
  • 1/4 teaspoon nutmeg
  • 1/3 cup panko
  • salt and pepper

Directions

  1. Preheat oven to 425°. Slice off the top of the garlic heads so the cloves are exposed. Drizzle with 1 TB olive oil and wrap in foil. Roast for 30-35 minutes. Remove and cool for a few minutes before squeezing the garlic into a small bowl and mashing well with a fork.
  2. Place bacon in a large skillet over medium-high heat and cook until crispy. Remove to paper towel-lined plate, reserve the grease. Reduce to medium heat, toss the leeks in, cooking until soft, about 4-6 minutes. Chop the bacon and toss it in with the leeks. Transfer the mix to the cooked pasta and return the skillet to the stove.
  3. Preheat oven to 375°. In the same large skillet over medium heat, bring 3TB olive oil to a sizzle, whisk in the flour. Cook 2-3 minutes until golden brown. Whisk in the milk, until it begins to steam
  4. Stir in the cheese until melted. Whisk in the roasted garlic along with 1/4 teaspoon nutmeg.
  5. In a small bowl, combine the panko with 1TB olive oil and a dash of salt and pepper.
  6. Toss the pasta mix into the cheese sauce, sprinkle with the panko and pop in the oven for 30 minutes, cooking until golden brown. Enjoy!
