Does anyone watch Smash?! I feel like that’s a joke. I started watching it the first season because I actually really love Broadway musicals, but never get the chance to go. While it was super cheesy, (still is), the singing and dancing was incredible..gave me goosebumps sometimes. I know, I’m so lame. Anyways, this season is SO.AWFUL. I’m sitting here catching up on it while I write this, and I’m not even sure why I’m wasting my time. Basically because I like to watch trash sometimes.
Ive hardly made it to the computer the last couple of days..my poor kiddos are sick. Both of them. It makes for sleepless nights, long days, and lots of cuddling. I really like that last part, but I wish I had six arms..two just isn’t enough anymore. Luckily, I’m sort of able to make it into the kitchen..for a few minutes anyway..which is where this Sizzling Fajita Salad Wrap comes in..
Oh this is so great. Not only does this entire fajita salad wrap take just 20 minutes, but it is SO full of flavor and texture and amazingness. I found the habanero-lime tortillas at Trader Joe’s, and while they definitely bring flavor and a good spicy kick to this, if you can’t find them I would just suggest adding a little heat with some cayenne, but if you find them, use them..they’re insanely delicious!

Fajita flavors bursting through with chicken and sauteed vegetables, all wrapped up with Haberno-Lime Tortillas, and drizzled with a refreshing Avocado Sauce!
Ingredients
- 1 Tablespoon olive oil, divided
- 5 slices turkey bacon, chopped
- 1 red bell pepper, sliced
- 1/2 yellow onion, sliced
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- pinch salt and pepper
- 1 large chicken breast, cubed
- 1/4 cup grape tomatoes, halved
- 2 cups spring lettuce mix
- 2 Habanero-lime tortillas (or your tortilla of choice)
- 2 Tablespoons Avocado-Green Sauce (If you don't feel like making the sauce, you could just toss in a few chopped avocados pieces)
Directions
- In a medium sized bowl, whisk together 1 Tablespoon olive oil with cumin, chili powder, smoked paprika, garlic powder, and a dash of salt and pepper.
- Add un-cooked chicken cubes and toss to fully coat. Set aside.
- In a large skillet over medium heat, toss in the turkey bacon and cook until crisp. 4-5 minutes. Remove to a paper towel lined plate and set aside
- Add the onion and pepper, and cook until softened, about 5-6 minutes. Remove to plate and set aside.
- Add to the skillet the seasoned chicken and cook through. About 6-8 minutes.
- To assemble, add a cup of lettuce mix to each tortilla, sprinkle on some turkey bacon and grape tomatoes, add the onion and pepper mix, place on some chicken, and drizzle with the avocado-green sauce. Enjoy!
