Welcome to the 5th installment to dip week! All of these are perfect game day snacks and cocktails, and really just perfect for any get together! My favorite part about Football games is all the food!! Other than the Patriots, I don’t get into it to-to much.
I’ve made a very similar salsa to this before, but It needed some updated photos and Ive updated the recipe a tad, plus it is just to darn good to not bring back into the spotlight! Roasted Tomatillo and Avocado Salsa Verde! The tomatillo’s, onions, jalapenos, and garlic are roasted to a caramelized perfection and blended in with the avocados and spices to make it creamy and refreshing! If you like to kick things up a notch, sprinkle in some cayenne!
This roasted, creamy, salsa verde is a wonderful change up from regular salsa. Its light, its flavorful, and has many uses! We love it in tacos or burritos, as a dip with tortilla chips of course! This is an easy, fail-proof salsa that is sure to please!
Ingredients
- 1 LB. Tomatillos husked, rinsed, and quarters
- 2 Jalapenos, cut in half, seeds removed
- 1/2 of a large yellow onion, quartered
- 5-6 whole garlic cloves
- 1 Tablespoon Olive Oil
- salt and pepper
- 2 teaspoons cumin
- 1 cup fresh cilantro
- 1 avocado, seeded
- Juice of half a lime
Directions
- Preheat your oven to 400 degrees.
- On a baking sheet, toss on the tomatillos, jalapenos, onion, and garlic cloves.
- Drizzle with olive oil and sprinkle with some salt and pepper.
- Toss to fully coat
- Pop in the oven for about 10 minutes, until everything starts to look tender and golden brown
- Cool for about five minutes before transferring everything to a food processor.
- Add in the cumin, cilantro, avocado, and lime juice.
- Pulse until well blended.
- Place in the fridge until completely cooled.
- Serve with tortilla chips or top those tacos!
