Can you believe that I used to hate avocados? Like, with a passion, I despised them. I didn’t get it..I couldn’t understand why everyone loved them so much. Aside from the fact that they’re such a healthy fat..Then one day I had the best guacamole ever, and my avocado-hating-self, was turned upside down. I started to love them on everrryythiiinngg. You can’t even walk into my house now without seeing Avocados sitting there.
We eat a ton of Guac..this is our go to! Its our favorite! There are so many different recipes out there, and everyone loves it their own way, but there seems to be one thing that every single person can agree on..that bacon, is amaze-balls. Its like the holy grail of food…it can basically go on everything, I mean I’ve seen it on Cupcakes..and Donuts..it could pretty much be included in every dinner dish that you could ever eat..its like a universal love affair.
This Roasted Garlic and Bacon Guacamole is no exception. Its my new love. The creamy, nuttiness of the roasted garlic, changes the whole dynamic of the guacamole..then go and add crispy, salty, deliiiciious bacon..and you’ve got yourself one big bowl of mouthwatering, savory, goodness..aka addiction.
We demolished this batch in one sitting. We ate half of it dunked with tortilla chips, and used the other half as a spread on an open faced chicken sandwich. Im not even mad. It was the BEST guacamole I have ever had. It may take a few extra steps then regular guac, but its completely, totally, 100% worth it. I can’t wait to eat this again, and again, and again.
An incredible twist on Guacamole with crispy bacon and roasted garlic!
Ingredients
- 1 head of garlic
- Olive Oil
- 3 strips bacon
- 2 Tablespoons minced red onion
- 3 avocados, seeded
- 1/4 teaspoon cayenne
- Juice of 1 Lime
- 1 roasted red pepper, chopped
- 1/2 cup cilantro, roughly chopped
- Salt to taste
Directions
- Preheat oven to 450 degrees. Slice off the top of the garlic head, place it in the center of a piece of tinfoil, drizzle with olive oil, wrap, and place in the oven for 45-50 minutes. When done, remove from the oven and unwrap to cool.
- While the garlic is roasting, roughly chop your bacon, and cook in a skillet until crisp.
- When the bacon is almost done, add in the minced red onion and cook for 2-3 minutes. Remove from heat and set aside.
- In a medium sized bowl, toss in the avocados and squeeze in all of the roasted garlic. (Should be a soft consistency) Add the lime juice and cayenne. Mash together roughly.
- Stir in the bacon and onion mixture, as well as the chopped roasted red pepper, and cilantro.
- Add salt to taste. (It doesn't need much at all!)
