Garlicky Kale and Caramelized Onions top a Juicy and Protein Packed Quinoa Turkey Burger!
You guys! We found a house! And its huuuuge. I am not even sure how I’m going to fill it all, but I sure am having fun trying. Well, most of it’s fun. The movers aren’t delivering our things until roughly NEXT Monday. So we’ve been sleeping on an air mattress and the floor, and up until yesterday, eating there too.
We spent four days straight, driving all over the state looking for a dining room table and a set of stools for our island. I had a pair that I loved but just couldn’t justify the money. My husband surprised me with them last night after I couldn’t find anything else, anywhere! Oooh I love them so!
My kids have been champions. After living in hotels since September, we’ve dragged them in and out of every store, and on long car rides for the past four days looking for anything to sit on. (Who knew eating dinner on the floor was so annoying?!) They’ve barely whined, cried or put up a fuss. I’ve been squeezing them extra tight in sincere appreciation. Because furniture shopping with two parents who can’t agree on one piece, sure is a lot to handle. 😉
I can’t stop making cookies! I haven’t had an oven since August, and there is nothing better than a hot, freshly baked cookie. Better pull my fat pants back out, because this girl is about to gain back all the weight I lost. Where is Shaun T when I need him?
To counteract some of the cookie dough, I try to eat a little healthier. (You know, except for that GINORMOUS burger I ate yesterday.) These open faced Turkey Burgers with Kale and Onions that’s all caramel-ly and garlic-ized is one of the tastiest dishes ever. I mean it. You could totally smush this between two buns and its a full on meal, or if you’re watching those L-B’s, eat it open faced with a side salad.
I don’t care how you eat this, just eat it.
P.S. I’m starting to think the onion and kale mixture looks kind of like Medusa’s hair….sorry for that scary image.
Garlicky Kale and Caramelized Onions top a Juicy and Protein Packed Quinoa Turkey Burger!
Ingredients
- 2 Tablespoons oilve oil
- 1/2 of a large red onion, sliced
- 1 1/2 cups chopped fresh, washed kale
- 1/4 teaspoon garlic powder
- 1 Tablespoon white wine vinegar
- salt and pepper
- 1 pound lean ground turkey
- 1 cup cooked quinoa
- 4 Tablespoons Worcestershire sauce
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 cup crumbled Gorgonzola cheese
- 1 Tablespoon olive oil
Directions
- Heat up 2 TB olive oil in a large skillet over medium-low heat. Add the sliced onion, and toss to coat.
- Saute for about 20 minutes, tossing occasionally, until the onion starts to caramelize.
- Add the chopped kale and garlic powder, toss together with the onion. Cover and allow to steam for about 3-4 minutes.
- Add the balsamic vinegar and toss. It will evaporate pretty quickly, but adds great flavor. Sprinkle in a crack or two of salt and pepper. Set Aside.
- While the onions above are caramelizing, begin making the burger patties. In a large bowl, combine the ground turkey, cooked quinoa, worcestershire, salt, pepper, garlic powder, and gorgonzola. Use your hands or a large spoon to fully mix everything together.
- Form into four, tightly packed patties.
- When the caramelized onion and kale mix above is almost done cooking, heat 1 TB of olive oil in a large skillet over medium-high heat.
- Add the burger patties and cook for about 5 minutes on each side. Try to only flip them once, it will minimize any falling apart.
- Once fully cooked, transfer burgers to a plate or onto a bun, top with the finished onion and kale mix, and serve. Enjoy!
