Fabulously filling and flavorful breakfast tacos loaded with eggs, red quinoa, turkey bacon, cheese, avocado, and a little bit of heat!
These weekends are flying by! It’s Monday before I even blink an eye. I can’t stand it. Time goes way to fast. I guess that means I’m having fun. But for real..slow.down. We leave in 40 days..the countdown is on. So much to do!
So we got into Homeland this week. We’re about halfway through the first season. I’ve been trying to convince my husband forever that he would like it..he claimed otherwise. Well he finally had no choice when we ran out of new movies to watch..he LOVES it. Like, loves it, loves it! Says he loves it when hes making coffee in the morning, texts me in the middle of the day that he can’t wait to watch it tonight. And I’m totally with him, I’m really into it too. If you watch it, please tell me that it stays good & doesn’t turn..but don’t give away any spoilers! 😉
So breakfast tacos! One of our favorite ways to ‘fancy’ up a breakfast! Just like dinner tacos, you can basically add anything into them with the eggs! This time I threw in some quinoa for an extra protein boost, added some crisped up turkey bacon, you can use regular bacon too, but I honestly really love turkey bacon, (only certain brands!) so I try to cut back when I can…on occasion! Toss in a sprinkle of freshly grated cheese and some fresh avocado, and you have got yourself one heck of a healthy, filling, gorgeous breakfast!
Just like these breakfast burritos, you could take all of the fillings, roll them up into a burrito, follow the instructions for wrapping, and freeze them so you have a filling, healthy breakfast on the go all week! I do this sometimes for my husband..he leaves so early. Calls me at 2pm, saying hes had nothing but coffee all day. No bueno. These tacos will hold him over for hours! And they’re flippin’ scrumptious!

Ingredients
- 1/4 cup of quinoa
- 1 Tablespoon olive oil
- 1/4 cup minced red onion
- 4 slices turkey bacon, diced
- 5 eggs
- 2 Tablespoons Milk
- 1/2 cup freshly shredded cheddar cheese
- 1 avocado, sliced
- salt and pepper
- sriracha (optional)
- 4-6 small flour tortillas
Directions
- Rinse the dry quinoa and pour into a small saucepan. Add 1/2 cup water, bring to a boil, reduce to a simmer and cover for about 20 minutes, until water is completely absorbed. Set aside.
- In a medium sized skillet, heat up the olive oil over medium heat. Add the minced onion, and cook until translucent. About 3-4 minutes. Add the chopped up bacon and cook, tossing occasionally until crispy.
- Once the onion and bacon mix are done, transfer to a plate and set aside.
- Keep the skillet heated over medium heat.
- In a bowl, whisk together the eggs, milk and a dash of salt and pepper. Cook the eggs in the skillet until scrambled all the way through. Set Aside.
- Wrap the tortillas in a paper towel and warm through in the microwave. 30-40 seconds.
- Assemble tacos. Add the eggs, cooked quinoa, grated cheddar cheese, bacon/onion mix, and fresh avocado slices. Top with hot sauce if desired. Enjoy!
