It’s Saturday, you deserve something easy and tasty. Meet Pumpkin Spice Granola. Though it requires a little attention once its in the oven, it’s nothing you can’t take care of while your feet are up watching your favorite shows, drinking a hot cup of tea or coffee. The end result will be spectacular and your house will smell like Fall.
At the end of it, you’ll have a wonderful breakfast, (I love to mix it with a little yogurt and drizzle of maple syrup!) and snacks for the rest of the week. Enjoy friends!
This Granola is perfectly spiced and pumpkin flavored and is a wonderful breakfast or snack!
Ingredients
- 1/2 cup pumpkin puree
- 3 Tablespoons applesauce
- 3 Tablespoons maple syrup
- 2 teaspoons cinnamon
- 2 teaspoons pumpkin pie spice
- 1/4 cup brown sugar
- 1 teaspoon vanilla bean paste
- 1/2 cup sliced almonds
- 4 1/2 cuts old fashioned oats
- non-stick cooking spray
Directions
- Preheat oven to 325 degrees. Lightly spray a baking sheet with cooking spray and set aside.
- In a large bowl, whisk together the pumpkin, applesauce, maple syrup, cinnamon, pumpkin pie spice, brown sugar, and vanilla bean paste, until smooth.
- Pour in the sliced almonds and oats. Stir together so the dry ingredients are fully coated.
- Spread evenly over the baking sheet, lightly pressing down.
- Pop into the oven for about an hour,but Every 15 minutes, using a spatula, carefully flip the granola, push the granola at the edges towards the middle and vice versa so that everything gets nice and crisp. If it's still not perfectly crisp after an hour, lower the heat setting to 300, continue flipping it until a cooled piece is crisp when bitten into. Enjoy!
