I should start by saying that these Peanut Butter S’more Truffles are one of the best sweet treats Ive had in a loong time.
So much so that when I was editing the photos over the weekend I had a baaadd craving for them . They’re irresistible. My parents stopped by shortly after I made these, and my dad had already popped about three of them in his mouth in the first 5 minutes. They’re SO.GOOD.
These little truffles are pure glory. Peanut butter, marshmallow, and graham crackers all rolled together, dunked in chocolate and drizzled with more ooey, gooey, sweet marshmallow. Its a perfect bite-sized s’more.
(Clearly I need to practice my drizzling skills.) On a different note, if you’re home in the mornings, you may already know this, but they play Boy Meets World reruns everyday. Usually I just flick on the today show, but we were up the other day before it started and I was having incredible TV ADD and couldn’t make a decision on what to watch have as background noise, until I came across BMW. This was my favorite show growing up, (other than Lizzie McGuire..it was so good in all its awfulness.)
I am ecstatic for its return as Girl Meets World..it sounds so promising if they do it anything like the wonderful 90’s sitcom and stay away from today’s horrid television shows. I hope they do, and I hope this generation gets it and loves it. Now, if only they would bring back Shawn…
While we’re talking about TV..has anyone started watching this new show, Deception? I am so sucked in. I can’t get enough of it..and I just want to lick chocolate off bad boy Julian. There’s so much going on and every week I die at the cliffhanger. Start from the beginning. Watch it!
Ingredients
- 1 cup Peanut Butter
- 3/4 cup powdered sugar
- 2 cups mini marshmallows, divided
- 2/3 cup crushed graham crackers (about 5 crackers)
- 3/4 cup dark chocolate chips or any melting chocolate
- 6 Tablespoons butter, divided
- 4-6 Tablespoons whole milk, or cream
Directions
- In a large bowl combine peanut butter, sugar, and 2 tablespoons butter.
- Add crushed graham crackers and stir to combine.
- In a small pan, with the heat on low, melt the marshmallows with 2 tablespoons of butter.
- Once fully melted, set aside about 1/2 a cup and with the remaining melted marshmallow, slightly mix into the peanut butter mixture, you want swirls of marshmallows throughout!
- Roll into 1 inch balls, and pop in the freezer for about 15 minutes.
- Meanwhile, on a double boiler, melt together chocolate and 2 Tablespoons butter. Once it starts to melt, slowly stir in milk or cream until you reach a good liquid, dipping consistency.
- Roll peanut butter balls in the chocolate and play on parchment or wax paper.
- Stick them back in the freezer for about 5-10 minutes before drizzling with the remaining marshmallow.
- Allow to harden and devour!
Notes
These can be kept at room temp, but I find them best stored in the fridge!
