We made our weekly trip to Trader Joe’s yesterday! It is seriously like, one of the biggest highlights of my week! hah I looove perusing the aisles for a fun new product or delicious looking food! PLUS, they have some of the most beautiful flowers, at SUCH a great price! I get a bouquet every week…yesterday I picked up a gorgeous bunch of pink tulips! They look beautiful in my living room with this glorious weather! Feels like Spring & Easter! Even my little sweet cheeks loves Traders! The staff there is SO friendly and nice, every.single.time. Its amazing..Ive never shopped anywhere that people were always so kind..I LOVE it. Id live there if I could!
Don’t even get me started on their wine selection. oh.em.gee. I don’t think Ive ever left there without at least five bottles. When they have Chariot Gypsy in stock..I buy like two-three cases. It is my absolute favorite wine…I got a friend of mine hooked and shes on the list with me..impatiently patiently waiting for it to come into stock..which happens possibly twice a year!

Onto these super easy, SUPER versatile, wicked cute, crazy good MINI Frittatas! (Aren’t they adorab’s!?) They’re wicked easy, and you can make them ahead of time, heat them up in the microwave for a minute in the morning and you have a full breakfast on-the-go! How fabulous is that?! Plus you can add whatever you’d like to them to suit your taste buds! Ive tried them with just egg whites and they work just as well..Ive done strictly veggie ones, and I love them just as much!
However you make these, whether it be for a brunch or to have a breakfast on the go, I promise you will be pleased! SO easy and they can be made to suit anyone’s palate! Now, go take a trip to your local Trader Joe’s, pick up a bouquet of beautiful flowers, a bottle of wine, and some AMAZING dark chocolate, and enjoy yourself! 🙂 ( Don’t forget to make these Mini Frittatas!)
Ingredients
- 4 eggs
- 2 egg whites
- 1/2 teaspoon salt
- 1/4 teaspoon freshly cracked pepper
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne
- 5 slices turkey bacon, cooked until crisp, then chop
- 1/8 cup red onion, diced
- 1/4 cup grape tomatoes, diced
- 1/2 cup broccoli, steamed and chopped
- 1/8 cup asiago, shredded
Directions
- Preheat oven to 350 degrees. Spray muffin pan with cooking spray.
- In a small bowl, beat together the eggs, egg whites, salt, cracked pepper, garlic powder, and cayenne.
- In the muffin pan, evenly divide the onions, tomatoes and cheese between each tin.
- Fill halfway with the egg mixture.
- Divide the broccoli and chopped bacon evenly between each tin.
- Top off with the remaining egg mixture.
- Pop in the oven for 15-20 minutes, until a toothpick inserted comes out clean.
- Allow to cool for five minutes, before using either a small knife of rubber spatula to loosen up the edges and pop out the frittatas.
- Enjoy!
Notes
Last in the fridge for 3-4 days. To re-heat, pop in the microwave for 30-40 seconds!
