Phew! What a day we had over here yesterday, boy am I glad its over! It was the first day my fiance was back in classes…all day…early morning until late night..and its like that basically every day..so its just momma and my little man all day ๐Ÿ™‚ Well, Day 1 was not a good start..my poor little monkey fell off the bed and slammed his face so hard that he has a bruised eye, and bit so deeply into his lip I thought we were going to have to get stitches ๐Ÿ™ Thennn….about 45 minutes later, at a scheduled Doctors appointment..he had to get shots in each arm..he was a very unhappy camper..there were a lot of tears, that continued all day until he went to bed last night…when my babes sad, it breaks my heart! Thankfully day 1 is over, and I’m incredibly optimistic about Day 2 ๐Ÿ™‚

Anyhoo! I had a huge bag of cherries in my fridge bordering being edible or landing in the trash…I had completely forgotten about them..which bummed me out because my little babe loves cherries..whoops! Turns out, it was for the best, because these Cherry Crumbles were in-freakin-credible! I thought they would be good because anytime you put a buttery, sweet crumbly mixture on top of any delicious fruit, its usually a pretty good combo..but these were even better than I expected!!

I miniaturized them to individual portions, and stored them in the fridge..when we wanted to reheat one, I just popped them back into the oven for about 10 minutes..good as the day I made them! Top them with a scoop of vanilla ice cream, and you’ve got yourself a pretty fancy, (easy!) treat! My kinda dessert!

Mini Cherry Crumbles

Ingredients

    For the Cherries:
  • 2 cups pitted cherries
  • 1 Tablespoon sugar
  • 1/2 Tablespoon flour
  • 1 teaspoon vanilla
  • For the Crumbly Topping
  • 1/4 cup butter, softened
  • 1/4 cup brown sugar
  • 1 cup rolled oats
  • 1/4 teaspoon cinnamon

Directions

  1. Combine the pitted cherries, sugar, flour and vanilla in a bowl.
  2. Toss and set aside for about 30 minutes, stirring occasionally.
  3. Preheat oven to 350 degrees.
  4. In a bowl or a food processor, combine the butter, brown sugar, oats, and cinnamon, until its crumbly.
  5. Divide the cherry mixture evenly among your ramekins. Top with a couple spoonfuls of the crumble mixture.
  6. Place them on a baking sheet and pop them in the oven for 30-35 minutes.
  7. Remove when golden brown and bubbly, top with a scoop of ice cream, and serve!

My little man couldn’t keep his fingers out any longer!! ๐Ÿ˜€
