A dairy free, light, Maple Pumpkin Latte, to add a little extra pep to your step this Fall!
I love a good pumpkin spice latte. It’s just SO Fall! The smell, the taste, even just the idea of it makes me think of over sized cozy sweaters, comfy leggings, boots, crisp air, pretty leaves, and everything that goes along with Fall!
I know I’ve been holding on tight to Summer, but the cooler the air gets, the more I’m ready for this beautiful season! I swear I stop in local coffee shops for hot cocoa and seasonal lattes more this time of year than any other..just so many yummy flavors!
But I much prefer to make them at home! Not only am I saving my pennies, which is a plus with Christmas fast approaching (whaaaaaat?!) But I also know what I’m putting in them! AND I don’t have to leave the comfort of my warm home and cozy pj’s to enjoy one when my kids are up at 630am..winning!
I hardly ever touch dairy milk anymore, it just doesn’t sit well with me. I’m much more into almond or soy milk these days. This latte is so tasty, just like your favorite coffee shops, and is a breeze to make! Mix together your favorite Silk Soymilk with real pumpkin puree, a little vanilla, some spice, and pure maple syrup. Top with coffee, or espresso if you like an extra kick, and you’re ready to go!

A dairy free, light, Maple Pumpkin Latte, to add a little extra pep to your step this Fall!
Ingredients
- 1 cup light vanilla soy milk
- 1/8 cup pumpkin puree
- 1 teaspoon pumpkin pie spice
- 1 teaspoon vanilla
- 1 1/2 teaspoons pure maple syrup
- 1 ounce espresso OR 1/2 cup of strong brewed coffee
Directions
- In a small saucepan over medium heat, whisk together the milk, pumpkin, spice, vanilla, and maple syrup.
- Heat until steaming, whisking occasionally.
- Brew your coffee or espresso and pour into a mug. When the milk mixture is ready, you can either pour it directly into the coffee, or to add a little froth to the top, blend it around in the blender for a minute. Careful, it's hot! Enjoy!
