Does anyone else just have to have a side when their eating a sandwich, or burger, hotdog, or anything else on the grill? I’m totally a texture person. I hate anything soggy..if my burger isn’t cooked enough and the juice soaks the bread, back on the grill it goes and I start with a new bun. If my sandwich bread isn’t toasted enough and the condiments start to make it even softer..I have major issues. I know, real world problems, right?
So clearly I don’t eat French Dip, because that would be far to soggy for me. I love chips or fries on the side, always. I love a good crunch with a mostly soft sandwich or burger. In the summer, a lot of us go for pasta salad as a side, and I’m all about it, its one of my favorites, but since it technically is bikini season, a lot of people are watching what they eat…I guess? 😉 Well here, my friends, is the answer to both of those dilemmas.
Not only is this Mango Jicama Slaw a perfect, light and refreshing side, but it has a slight kick, sweetness, CRUNCH, and is healthy! It is seriously my favorite snack. (So simple, right?)Â When I make it, I make the entire recipe and munch on it all week long..randomly pulling it out of the fridge for a few bites. I top it on salads, eat it with chicken or fish, and/or just stand there with my fork in it. I’ve been making this often for a couple years, and it is always loved! I’ve been asked for this one a lot!
If you’re a snacker like me, watching your calorie intake, need a good crunch, love a good flavor..Mango Jicama Slaw is for you! It takes minutes to throw together and lasts all week in the fridge! Yesterday, I showed you how to cut up a jicama, today, you need to go and make this! Don’t forget to let the flavors marry for a little bit! This deliciousness only gets better with time!
This slaw is the perfect light side or snack with just a touch of sweetness, a slight kick, and a tang! It is SURE to please!
Ingredients
- 1 lime, zested and juiced
- 2 Tablespoons apple cider vinegar
- 1 1/2 Tablespoons honey
- 1/2 teaspoon sriracha
- 1/2 jalapeno, seeded and minced
- 1/2 bunch of cilantro, roughly chopped
- 2 almost-ripe mango's, peeled and sliced
- 1 large Jicama, peeled and sliced
Directions
- In a large bowl, whisk together the lime juice, zest, apple cider vinegar, honey, and sriracha
- Stir in the jalapeno and cilantro
- Add the mango and jicama slices
- Pop in the fridge for at least 30 minutes. Enjoy!
