I’ve talked about my love for The Voice on here numerous times..I love the idea of it, I love all the coaches, I love the dynamic, the humor, the competitiveness, the good looking men 😉 etc etc haha So when I heard last year that Christina and Cee Lo wouldn’t be coming back this season, I about lost my marbles. I get very protective of my shows..clearly.

So when we watched the Season premiere the last couple of nights, I went into it already hating the judges. I’m so close minded, I know. But let me just say, I LOVE it. Dare I say, I love it even more than before?! Shakira is so funny..something I never expected, but she can keep up with Blake and Adam like its nobody’s business, the girl can sell it. Usher is just so smooth and charismatic..I’m really likin’ it.

Now that Ive gone on about my favorite “reality” show, let me go on about this Mango Bellini. It’s the perfect light drink for these approaching, warm Spring days. Its so simple, low-cal, and not to mention absolutely delicious! Its fruity and sparkly, a perfect little classy cocktail for a dinner party, your Easter brunch, or just sippin’ on in place of your usual mimosas 😉

Total Time: 5 minutes

Yield: 4-6 Servings

Mango Bellini

Mango and Sparkling wine come together to create a light, refreshing, and low-cal Mango Bellini!

Ingredients

  • 1 mango, peeled
  • 1/2 lime, juiced
  • 1 bottle of chilled sparkling white wine

Directions

  1. In a food processor combine together the mango and lime juice until completely purred and smooth.
  2. Scoop desired amount of puree into a glass, I used about 2 tablespoons or so each, and pour sparkling wine over it.
  3. Stir and serve!
