Do you ever have SO much to do that you have no idea where to start? That’s kind of where I’m at right at this moment. I feel completely overwhelmed. The amount of activities we have going on every.single.weekend. from now through the end of June is cah-razy. I can’t even keep up with it all in my head long enough to write it all down. And I HAVE to be organized, so not having a plan and be able to prioritize is driving me batty!
My son is almost 22 months old and I finally just set his christening date. So Ill be getting both boys baptized on the same day, which is nice. I guess since that is coming up first, I should deal with that. Wait, no! Easter is before that..doh. See what I mean? Totally lost. That is just the tip of the iceburg for the amount of events I have to attend/plan in the coming months. Are we legally cloning yet? I could sooo use two of me.
Aside from all the craziness going on over here, you should make this sandwich. Its chicken salad, but with a ranch flavor, but without the creamy, fatty, ranch dressing. Basically its awesome. Ive made a healthy chicken salad before, and I still swear by it, and honestly its been the most popular recipe on here for awhile. But sometimes I like a little twist on my food, don’t we all?

Chicken Salad sandwiches with a lighter Ranch twist!
Ingredients
- 1 Tablespoon Dijon Mustard
- 1/2 cup non-fat plain Greek Yogurt
- 1/2 teaspoon dried parsley
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1 tablespoon freshly minced chives
- 1 teaspoon lemon juice
- 1/4 teaspoon sugar
- pinch salt and pepper
- Rotisserie Chicken, shredded (OR two chicken breasts, cooked and shredded)
- Lettuce
- 1-2 Tomatoes
- 4 Rolls or bread of choice
- cheese (optional)
Directions
- In a medium sized bowl, mix together the mustard, yogurt, parsley, onion powder, garlic powder, chives, lemon juice, and sugar,
- Add a few pinches of salt and pepper to taste.
- Stir in the shredded chicken. (Store in the fridge in an airtight container until ready to use)
- Assemble on rolls with lettuce and tomatoes. Add any additional choice of toppings, such as cheese. Enjoy!
