Umm July 1st? Where the heck did June go? This Summer is already flying by.. I’m hoping with all the craziness of the wedding being over that things slow down a little bit. And seriously hoping for an improvement in the weather..we were reading this morning, that this past June was the 5th rainiest June of all time..it rained 21 out of 30 days last month. Talk about a dreary start to Summer. July isn’t starting out to fabulous either, with rain the first few days..but then they’re predicting sunshine and 85 following that! Fingers Crossed!
Ok, I sounds like a flippin’ meteorologist..boring. We had this passed weekend all to ourselves for the first time in months! We spent Saturday starting to go through and clear out our house. We’re taking very little with us, and shipping the rest. We’re pretty much getting rid of EVERYTHING. Its kind of refreshing. Sunday, we got an early start and plopped ourselves down on a patio on the ocean with lots of beers, live music, and great company. It was so fun and so relaxing! My little one loves music and dances his bum off the whole time 🙂 WE followed the day up with a fantastic grilled BBQ. I love Summer, rain or shine.
Clearly 4th of July is coming up this week, and I’m sure you all have parties planned for this weekend! We’re trying to go away somewhere, but we’ll see how that works out! This Jicama Fruit Salad is a fabulously delicious and sweet twist on a classic fruit salad. The jicama adds a wonderful crunch! The entire thing is tossed in a cinnamon and honey-lime glaze! It is such a fantastic combination of sweet, tart, crunchy, and smooth. The flavors are wonderful together, and it really makes a great side, or just a snack to munch on! No matter how you decide to serve it, you should definitely add it to your 4th of July Spread, or even dinner tonight? 😉

Wonderfully sweet fruit, combined with crunchy Jicama and tossed in a Cinnamon, Honey-Lime Glaze, adds a wonderful twist to this Fruit Salad!
Ingredients
- 1/2 Jicama, cubed
- 1/2 pound strawberries
- 6 ounces blueberries
- 2 mango's, peeled and cubed
- 2 oranges, wedges halved
- 1/2 lime, juiced
- 2-3 Tablespoons honey
- 1/8 teaspoon cinnamon
Directions
- Peel, chop, dice all of your fruit and toss them into a large bowl.
- In a small bowl whisk together the lime juice, honey, and cinnamon for the glaze.
- Pour on top of the chopped fruit, and toss to fully coat.
- Store in the fridge until ready to serve, occasionally tossing to continuously coat the fruit!
Notes
If making the night before, its best to wait to add the strawberries until the morning you're ready to serve this Fruit Salad!
