Did you all have a fantastic weekend? We did! We took our kiddos to Pumpkin Land on Saturday, and hiked our way through a huge corn-maze, it was the first time I’ve done one and it was nothing what I expected but fun for sure! Sunday, we saw my husbands family for the last time, and said our second round of good byes. Sunday night consisted of take-out Chinese, and a funny movie. It was perfect!
We’re in our final week here in Maine…my husband is driving down, leaving Thursday morning, and the boys and I are flying out and meeting him there on Saturday afternoon. I’m excited, happy, eager, nervous, and sad all at once. This is such a bittersweet time…Im sure you’ve heard me say that enough by now, SO onto the good stuff. P.S. I made this dish awhile back and just kept forgetting about it. I almost didn’t share it because I know everyone is all into their Fall foods now, but it was just so good I couldn’t let it fall on the wayside. It is healthy, clean, easy, and has SO much flavor! It’s red quinoa topped with two salsas. One is made with mangos, avocado, and kiwi, and the other is loaded with roasted corn, black beans, and tomatoes. On top of all that is some Jalapeno Chicken Sausage. The flavors are so fresh, with a bit of spice, and every bite it loaded with perfect texture.
Make the salsas ahead of time and you’ve got a 15 minute meal on your hands! When dinnertime rolls around, its as easy as adding it all together! I loved this for both lunch and dinner. So will you! 😉
Mango, Kiwi, and Avocado Salsa over Cumin-spiced Red Quinoa, tossed together with a Roasted Corn, Tomato, and Black Bean Salsa makes a flavorful, easy, and healthy meal!
Ingredients
- 1 mango, peeled and cubed
- 1 kiwi, peeled and cubed
- 1 avocado, cubed
- 1/2 a jalapeno, seeded, diced and divided
- 1/4 of a red onion, diced and divided
- 1/4 cup cilantro, roughly chopped, divided
- 1 lime, divided
- 1 cup black beans
- 2/3 cup frozen corn, thawed and roasted
- 2 tomatoes, diced
- salt and pepper
- 2-3 Jalapeno Chicken Sausage links, sliced (or chicken sausage of choice)
- 1 cup quinoa, cooked
- 3/4 teaspoon cumin
Directions
- In a medium sized bowl, combine the mango, kiwi, avocado, half of the diced jalapenos, half of the red onion, and half the cilantro.
- Squeeze in the juice from half of a lime and toss to combine. Season with salt and pepper to taste. Set aside.
- In a separate bowl, toss together the remaining jalapeno, red onion, cilantro, black beans, roasted corn, and tomatoes. Squeeze the second half of the lime, toss and set aside.
- In a medium skillet, over medium-high heat, cook the sliced chicken sausage for 3-4 minutes on each side, until golden brown. (It's generally already pre-cooked, so you're just browning it and warming it through.)
- In a large bowl, add the cooked quinoa, cumin, fruit salsa and black bean salsa. Toss together, and serve!
