My little guy is almost fifteen weeks old and only recently did I finally feel like things are fully back to normal. Well, the new normal anyway. This babe just slipped right in, and fits so perfectly into our little crew. I’m feeling much more competent at shopping and running errands with all three (though sometimes it seems like a traveling circus!), we’ve got a really good routine going, and most importantly dinners are being made again, which means my kids don’t have to survive off corndogs! I kid, I kid, you remember I made lots of freezer meals!

Those were excellent, and I highly recommend you do that if you’re having a baby. Mine are almost gone, and I’m onto making dinners that are quick, easy, delicious, and healthy!

Italian Style Sausage Soup

If you follow me on Snapchat (username: alaina588), then you know I’ve started to work out again post-baby. Getting back in shape is no joke, but it feels so good to be moving again. The hardest part sometimes is eating clean, but really, who wants to waste a perfectly good workout by hammering down junk?

My top must-haves for dinners these days are quick and healthy. My husband is never home when I’m cooking, the kids are usually tired by that point in the day, the littlest guy likes to be held around then (thank goodness for baby wraps!), and so I turn to foods that can help make dinnertime easier.

Italian Style Sausage Soup

Italian Style Sausage Soup

Italian Style Sausage Soup

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Yield: Serves 4-6

A healthy, protein and veggie packed, Italian style soup that is ready in less than 30 minutes!

Ingredients

  • 2 TB olive oil, divided
  • 1/2 cup minced yellow onion
  • 4 cups cubed butternut squash
  • 5 links chicken-apple sausage, halved and chopped
  • 2 bags Birds Eye Italian Style Protein Blends
  • 4-6 cups chicken broth

Directions

  1. In a large pot, heat 1TB olive oil over medium heat. Add the onion and cook about 2 minutes, stirring often.
  2. Add the butternut squash, and increase the heat to medium-high, cook for about 5 minutes, enough to caramelize all the edges
  3. Transfer the onions and squash to a large bowl. Heat the remaining 1TB olive oil, and add the sausage, cook for 4-6 minutes, tossing frequently, to brown all the sides.
  4. Add the squash and onions back in, along with both bags of the protein blend. Stir together.
  5. Pour in the chicken broth enough to just cover the contents of the pot. Stir well
  6. Bring to a simmer, cover and cook about 10 minutes, until the butternut squash is fork tender. Give it one last good stir, then serve. Enjoy!
