Island Spiced Pork

Oh meh God! This was AMAZING! I just have to start out with how ecstatic I am about it! It came out way better than I ever thought it would! You have to make this, because it literally takes up ten minutes of your time, for a DELICIOUS dinner! In between scarfing his face, my fiance said “This is the bomb diggity” I have NEVER heard those words leave his mouth in over three years together, SO I’m guessing he thinks it was awesome too! AND IT WAS!

For dinner I served it over brown rice, with a side of candied brussels sprouts and broccoli!(YUM!) I haven’t tried it as leftovers, but he made a sandwich with the pork, and said “This is sooo good!” So there you go..two meals for ten minutes of your time! 😀 Don’t you just love that!

We’re going to look at a possible wedding venue today! (Yippee!!) Tonight we’re dropping our little guy off with my mom and going out to dinner for a friend’s birthday at NOSH KitchenBar. This place was on Man vs. Food, they’re infamous for their bacon dusted fries..(they are OUT.OF.THIS.WORLD) If you are ever in Portland, go try their fries, you will be soooo glad you did..(and fries everywhere else will forever be ruined for you!)

Island Spiced Pork

Ingredients

    For the rub:
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 1 tsp. ground cinnamon
  • 2 1/2 pound pork roast
  • For the glaze:
  • 1/2 cup brown sugar
  • 3-4 cloves minced garlic
  • 2 tsp. Tabasco sauce
  • 3 tablespoons olive oil
  • 1/4 cup beef stock

Directions

  1. In a small bowl combine the salt, pepper, cumin, chili powder, and cinnamon. Rub it all over the pork, pushing it into the roast.
  2. Place the pork roast in your crockpot, seasoned side down-fat side up.
  3. In the bowl, combine the brown sugar, minced garlic, Tabasco sauce, olive oil, and beef stock. Whisk together and pour over the roast.
  4. Set the crockpot on low and allow your house to fill with AMAZING aromas for eight hours. Every so often, if you so desire, you can open the lid and spoon some sauce over the top.
  5. When you're ready to eat, pull the roast out, shred it, add it back in to the DELICIOUS and savory sauce, toss to coat.
  6. Serve and swoon! (Its fabulous over brown rice!)
