Puhleeease tell me that you eat Tacos all winter long? I’m not sure if we can be friends if you’re a summer only taco eater..well we caaaannn, but I would be slightly disappointed. Tacos make a weekly appearance in our house, year round. They’re just so easy. For the most part, I do slow cooker tacos, so that by the time dinner comes around, all I’ve got to do is throw together a salsa or a slaw (sometimes both!) and eat!
But non-slow cooker tacos are a pretty quick thing too. Do you do food prep at the beginning of each week? Or even meal plan? Do you ever find it takes awhile, no matter how many recipes you’ve pinned on Pinterest!? Or is that just me because I’m crazy indecisive? I pin all week long, and every day I see more and more meals I want to make for us, but when it comes down to planning for the week, I can never make up my mind. #firstworldproblems I know.

These tacos are so super easy, and so flavorful! If you food prep, your chicken will already be done, and all you have to do is make the salsa! If you don’t then just sprinkle the chicken with the spices, bake, and shred! (I shred ours in a stand mixer and it takes about 2.5 seconds, versus the 10-15 minutes it may take using two forks. personal preference!)
I used my favorite hot and sweet peppers in the salsa, I just cannot get enough of those! I’ve thrown them in a burger, and on a pizza, and once in awhile you might find me with a fork in the jar standing in my kitchen. The best!

Chicken Tacos loaded with Sweet Mangos and Hot Peppers, topped with a refreshing and cooling Lime Crema! Easy, healthy, delish!
Ingredients
- 2 pounds chicken breast, fat trimmed
- 2 teaspoons cumin
- 2 teaspoon chili powder
- salt and pepper
- 2 mangos, diced small
- 8 ounces hot peppers, roughly chopped
- 1/2 jalapeno, seeds removed, minced
- 1/4 cup chopped red onion
- 1/4 cup fresh cilantro
- 1/2 lime, juiced
- salt and pepper
- 1/4 cup light sour cream
- 1/2 lime zested and juiced
- 8-10 small corn or flour tortillas
Directions
- Preheat oven to 350°.
- Spray a baking dish with cooking spray and place the chicken in it. Sprinkle one side of the chicken with half the cumin and chili powder, flip it, and sprinkle the chicken with the remaining cumin and chili powder. Crack on some salt and pepper.
- Bake in the oven until cooked through, 30-35 minutes.
- When done, remove and cool for 5-10 minutes before shredding. (To shred quickly, I like to throw the chicken, one at a time, into my stand mixer with the paddle attachment. It's so quick!)
- While the chicken is cooking, make the salsa!
- In a medium-sized bowl, combine the mangos, hot peppers, jalapeno, red onion, cilantro, lime juice, and salt and pepper. Toss to combine and set aside.
- To make the crema, in a small bowl, mix together the sour cream, lime zest, and juice.
- If you like to fry up your tortillas, do so now, or if you're steaming them, pop them in the microwave and get them ready!
- To assemble, place some chicken in your tortillas, top with the salsa and sour cream. If you want to add cotija or your favorite cheese, do for it! Enjoy!
