I can’t believe its already a new week..my baby is 10 months old on Tuesday and Easter is on Sunday…where the heck have I been when time is flying right by?! Slow down world..I haven’t had a chance to catch my breath!

So you know when you were little, and you wanted frozen processed, fake, pizza bites…you know, the ones that we probably still feed our kids, because sometimes its just…easier. WELL these fabulous little cuties are for YOU! Grownup Pizza Bites! They are poiiiifect for any party appetizer, great for a game…(sadly football is still many moons away) or maybe just for dinner tonight…to demolish in five minutes…like we did.

I made four different flavor bites, but you could so easily just triple the toppings and make all the same kind, OR use one of the types and make one large pizza? I may have done that too! 😉 Anyway you do it, these pizza bites are classayyy, more grown up, and adorable for any appetizer spread! PLUS I just gave you four new flavors of pizza…you can’t.go.wrong! Enjoy!

Grownup Pizza Bites

Prep Time: 30 minutes

Cook Time: 10 minutes

Total Time: 45 minutes

Grownup Pizza Bites

Ingredients

    For the Dough
  • 1 ½-2 cups wheat flour plus extra for dusting
  • 1 packet pizza crust yeast
  • 1 ½ teaspoon sugar
  • ¾ tsp. salt
  • 1 tsp dried garlic flakes
  • ½ tsp parsley
  • ½ tsp oregano
  • 2/3 cup very warm water
  • 2 tablespoons olive oil
  • Mango Sausage Pizza Bites
  • ½ teaspoon olive oil, divided
  • 4 thin slices fontina cheese
  • ½ yellow mango, sliced
  • ½ spicy sausage, cooked and sliced thin.
  • Tomato/Feta Pizza Bites
  • 1/8 teaspoon minced garlic, per 3” round
  • 4 thin slices tomato
  • ½ Tablespoon tomato basil feta, per 3” round
  • Apple, Bacon, & Fontina Pizza Bites
  • ½ teaspoon olive oil, divided
  • 4 thin slices fontina
  • 2 slices salami, torn in two
  • 2 slices ham, torn in two
  • Arugala
  • Roasted Garlic & Sausage Pizza Bites
  • 1 head garlic roasted, divided four ways
  • ½ cup shredded cheddar cheese
  • ½ cooked spicy sausage, sliced thin
  • 4 rings of red onion

Directions

  1. Start with the dough by whisking together 1 ½ cups flour, yeast, sugar, salt, garlic flakes,
  2. parsley, and oregano.
  3. Add warm water and olive oil and mix with a wooden spoon. Add extra
  4. flour if necessary.
  5. Knead until soft, elastic, and doesn’t stick to your fingers.
  6. Dust a clean surface with flour and roll out dough to about 1/8 inch thick.
  7. Using a 3 inch round cookie cutter, make as many cut outs as you can.
  8. (I got about 16)
  9. Preheat oven to 425 degrees.
  10. For the Mango Sausage Pizza, Divide the olive oil between four rounds and rub it to the edges.
  11. Top each with a slice of fontina, a slice of mango, and a couple
  12. slices of spicy sausage.
  13. For the Tomato Feta Bites, rub the minced garlic around each circle.
  14. Top each with a slice of tomato and 1/2 Tablespoon tomato Basil Feta per 3" round.
  15. For the Apple, Bacon, and Fontina Pizza, Divide the olive oil among four 3” rounds.
  16. Top each round with 1 slice of fontina, half a slice of salami, and half a slice of ham.
  17. Add Arugula once removed from the oven.
  18. For the Roasted Garlic and Sausage bites, Spread roasted garlic paste on each round.
  19. Top with cheese, cooked sausage, and red onion.
  20. Spray a baking sheet with cooking spray.
  21. Using a spatula transfer the pizza rounds to the baking sheet.
  22. Pop in the oven for about 10-12 minutes, remove and devour!
