Have you heard of JustFab? I’ve mentioned it once before, but feel the need to talk about it again because I am just so in love with it. They’ve recently launched a Fabletics line, which I believe was designed by Kate Hudson, and I love it. I ordered a pair of pants last night, they look so comfy, I can’t wait to get them!

They also have a fabkids line that I just adore! I ordered some things for my kids last night as well. The items are so unique and adorable, and when you sign up and place your first order, the entire outfit is only $15! I’m not being paid to say any of this guys, I just truly love all their options on all their lines, and the prices are beyond amazing. I can see my shoe collection growing mighty large this Summer. I want ALL THE WEDGES! And the bags…oh the colors.

I’ve been trying not to do to much shopping lately, but it’s not really working out. My husband gets one Friday off every month, and today happens to be the day, so I’ve got a full morning of shopping planned, all alooooone. *que confetti!* Sometimes it’s just so nice to run errands by myself..I don’t feel rushed or have to worry about my kids. It’s relaxing and enjoyable.

I can’t believe Easter is already this weekend. I feel like it kind of snuck up on me this year. At the beginning of April, I was all, Well it’s at the end of the month this year, and since it was the first week of April last year, I have more than enough time to do everything! Umm about that.

I still haven’t decorated eggs with my kids. I feel like crap about that. I mean, once you have kids, isn’t half the fun of all these holidays about crafts, and making memories, yaata yaata? I just kept thinking I’d have more time. As it is, part of the errands I’m running today are to find things to fill their baskets with, that isn’t completely candy. On top of that, I don’t even have any kind of Easter dinner planned yet, the most we’ve talked about it was when I asked my husband what kind of CAKE he wanted that day. Priorities I tell yah.

Well there’s always next year. I’ll decorate and do all the things with them next year. I kind of think my one year old is still to little for egg decorating anyway, though I’m sure there’s about a million and one finger paint crafts I could have done with him. I hate Pinterest…all you supermoms rock. Go you.

Moving on to this delectable Grapefruit-Champagne Fruit Dip..I don’t even know what to call it. It is sweet perfection. Melted white chocolate, with freshly squeezed grapefruit juice, and a pop of bubbly! It’s such a fantastic dip for fresh fruit, and it’s so easy to throw together. You can make it the day or two before you need it, and just let it sit in the fridge. The white chocolate gets slightly firm, but due to the champagne, it becomes easy to dip again within 20-30 minutes at room temp.

Make it, dip it, you’ll love it!

Grapefruit-Champagne Fruit Dip

Cook Time: 20 minutes

Total Time: 40 minutes

A pop of Champagne and a little tangy Grapefruit Juice give this White Chocolate Fruit Dip a little extra tang!

Ingredients

  • 12 ounces quality white chocolate
  • 1/4 cup heavy cream
  • 1/2 cup champagne
  • 2 Tablespoons fresh squeezed grapefruit juice
  • 1 Tablespoon grapefruit zest

Directions

  1. In a medium saucepan over low heat, add the white chocoalte and the cream. Stir occasionally until it is completely melted and smooth.
  2. While the white chocolate is slowly melting, add the champagne to a small saucepan over medium heat. Bring to a slight simmer, and allow to reduce down. It will take about 10 minutes to reduce down to about a 1/4 cup and thicken up. Once it does, remove from the heat and set aside.
  3. Transfer the melted white chocoalte to a medium sized bowl.
  4. Stir in the reduced champagne, grapefruit juice, and grapefruit zest.
  5. Set in the fridge to cool. You can even do it the day before. The booze won't allow the white chocolate to fully harden.
  6. Pull the dip from the fridge 20-30 minutes before you're ready to serve it. Stir it a few times and it should be ready to go! Enjoy!
