So on Saturday we’ve tackled a project that I’ve been dying to do for months..Ive had all the materials and was just waiting for the foam to be delivered. I saw a wonderful (& seemingly easy) DIY Ottoman)on Pinterest. Which I also thought would save us a bunch of money instead of buying one..you know how expensive those big ones can be! Anyways, we finally set out to do this, and we did. It took us about 4 hours with a little wee man running around and ‘helping’. I can’t wait to show it to you guys..We love it! It came out so great and it was my first major upholstery project…Im pretty proud!
With all of that said..as much as we love it, my fiance says he will never in his entire life do something like that again..apparently I’m on my own for any future reupholstering, (which creates issue when I already planned on doing the kitchen chairs!) Secondly, by the time we purchased all the materials necessary to do it, Id say we probably only saved about $80…which is not a lot when you consider the average price of those suckers is a few hundred dollars. Its a good thing we love it so much, its a great talking piece, and we’ll always love it more than if we had bought one from the store. (I think.) Would I do it again? Probably. But its definitely a two person job, so I’m going to have to give it some time before convincing him to help me again! 😉
Onto more delicious things. This Pasta. Ohh this Gorgonzola-Chicken Pasta. There aren’t enough words. First, it only took 25 minutes..which is sooo my kind of meal when I have a sweet boy hanging on my leg dying to watch Raffi. I like quick meals during the week when there’s no one else home to help me hang out with my 16 month old during his most tired time of the day. This pasta was IN.CRED.I.BLE. Im not even exaggerating..I went back for three helpings..my son devoured his plate and pointed for more..hes a good eater, but whoa did he eat a lot! My fiance couldn’t stop oohing and aahing..it was so creamy, so flavorful, and so easy!
I would make this again and again. We only had one small bowl of leftovers out of a whole box of pasta..with two adults and a 16 month old..gluttonous much? No..it was just amazing! The Gorgonzola gives it wonderful flavor without being to overpowering. Next time you’re looking for something quick, I highly recommended you turn to this Gorgonzola-Chicken Pasta. Its heavenly!
Ingredients
- 1-16 ounce package pasta (rotini or penne)
- 1 tablespoon olive oil
- 2 large boneless skinless chicken breasts, cut into ½ inch pieces
- 1 red pepper, sliced
- 1/2 cup chicken broth
- 2 large garlic cloves, minced
- 1 cup heavy whipping cream
- 5 ounces crumbled Gorgonzola cheese
- 6 fresh sage leaves, julienne
- Salt and pepper to taste
Directions
- Cook pasta according to instructions, drain and set aside.
- In a large skillet over medium-high heat, pour the olive oil in. Once heated, cook the chicken and red peppers until cooked through.
- Add the minced garlic and the chicken broth, scraping up the brown bits off the bottom of the pan.
- Reduce heat to medium, Add the cream, and cook until sauce thickens slightly. It will start to bubble
- Stir in the Gorgonzola cheese, sage, salt, and pepper. Cook until the cheese is fully melted.
- Add the pasta and toss to coat. Enjoy!
