My hubs is the creator behind this fabulous cocktail!
He’s generally the bartender around these parts..I’m best at margaritas…I’m sure it has nothing to do with the fact that they’re my all-time favorite.
It’s Friday, we all deserve a cocktail. I know I do. My kids didn’t go to bed until 10pm last night…what the whaaaat? (Normal bedtime is 7pm) I was not a happy camper. At one point I gave up trying until my hubs could get home, and I just cuddled up with them on the couch watching Curious George. My son is obsessed. I’ve barely slept this week..(moving my little babe from a bassinet to a crib..not so smooth thus far) oh and my hubs has pink eye. eww. Id say its time for a drink.
A Ginger Beer Mojito to be exact. This little beauty was an accident one day when we didn’t have any soda water left. That was the best accident that ever did happen. I am positive that I will forever make my mojitos this way..you should too!
BOTTOMS UP!
Mint and ginger come together to make an extremely refreshing and delightful mojito!
Ingredients
- 30 mint leaves (or less, just add your desired amount...we like it extra minty!)
- 3 ounces silver rum
- 8 ounces ginger beer
- 3 ounces freshly squeezed lime juice
- Ice cubes
Directions
- With a pestle and mortar, muddle together the mint with a dash of the ginger beer.
- Once its good and muddled, divide the mint between two glasses.
- Pour in 1 1/2 ounces of rum into each glass, 4 ounces of ginger beer into each, 1 1/2 ounces lime juice in each, and toss in some ice cubes.
- Mix it all up and serve with an extra slice of lime if desired. Enjoy!
