Fruit Smoothie

I’m sure a lot of you don’t have this problem..but I have a hard time fitting in the suggested amount of fruits and vegetables every day. Usually I’m just so busy I forget to eat and before I know it, its dinner time. One of the easiest, greatest, & most delicious ways I attempt to get my fruit serving is with smoothies! They’re so simple, so quick…just throw it all in the blender, pour and go!

This fruit smoothie is packed with  so many Vitamins and minerals, such as Vitamin A, C, minerals Manganese, Potassium, and more! All in one cup! You really can’t go wrong! I blend this baby up and spoon feed it to my little guy! He loves it! (As a result, part of my couch now has berries all over it…I’m awful about putting him in his high chair to feed him! hah) But for him to get his fruit fill, its totally worth it!

I love this smoothie because it doesn’t separate! I HATE when I get a smoothie and the juice parts separate from the ice. Drives me nuts! There is no ice in this one…and I’m here to tell you, it doesn’t separate, not even after a few hours in the fridge…not even a little bit! In fact, I discovered after having a glass leftover, if you stick it in the fridge for a couple of hours, it actually starts to thicken..almost like pudding! Which I think is excellent because now I can make these at night, refrigerate them overnight, and have little snacks to go! Genius! :) It’s like a double recipe! :)

So not only is this absolutely delicious, but it serves as a double recipe, it doesn’t separate, and its sooo GOOD for you…those are all pretty darn good reasons to make this stat! :)

Fruit Smoothie

Ingredients

  • 4-5 large strawberries, or 6-8 small ones
  • 1 medium banana
  • 2/3 cup blueberries
  • 1 1/2 cups Orange Juice
  • 3-4 Tablespoons Plan non-fat Greek Yogurt

Directions

  1. Add all ingredients into a blender and blend until smooth.
  2. Pour and serve!

Notes

To not have to use ice, I buy my strawberries and blueberries fresh, then freeze them. So when I add them to the smoothie, they are frozen, acting as the ice!
