Christmas is basically HERE! Are you still doing lots of baking? We are..it just doesn’t ever really stop this time of year. I’m sure you’ve got loads and loads of treats you want to make, but why not add one more to your plate?
These fabulous cookies are a slight update to ones I made a couple years ago…Not only did the post need updating, but the cookies are so wonderful they needed the light shined on them again! I added some chopped nuts for a little more character and these babies were a hit!
In one day, out of almost 50 cookies, I only had a small handful left..that’s saying something! 😉 These are once again, on their way to a Christmas party today..and they should be going to yours too! Super soft, festive, and loaded with spices and flavor, these are sure to be loved all around!
Super Soft Eggnog spiced cookies, that are rolled in chopped nuts and topped with melted white chocolate.
Ingredients
- 3 sticks unsalted butter, softened
- 2 cups packed brown sugar
- 1 cup eggnog
- 2 eggs
- 2 teaspoons vanilla
- 2 teaspoons nutmeg
- 1 1/2 teaspoons cinnamon
- 1 1/2 teaspoons ground cloves
- 6 cups flour
- 2 teaspoons baking soda
- 2 cups pecans, finely chopped
- White Chocolate Melts
Directions
- Preheat oven to 350° and line baking sheets with parchment paper.
- Cream together the butter and sugar for 2-3 minutes.
- Add the eggnog, eggs, vanilla extract, nutmeg, cinnamon, and ground cloves.
- Mix in the flour and baking soda, until just combined.
- Roll into a ball, about 1-1 1/2inches wide, lightly press in white chocolate melts and roll in pecans. Place on baking sheets about 2" apart.
- Bake for 8-10 minutes. Remove from the oven and cool 2-3 minutes before transferring to a cooling rack.
