How was everyone’s Holiday Weekend?! Full of delicious food, some shopping, football, and lots of decorating? Fabulous..mine too! 🙂 I love the holidays, and this year has been no exception. Its always so wonderful to see family this time of year We spent Thanksgiving with my fiances parents and it was great..we never get a chance to see them and when we do there are always so many other people around, it was nice for them to spend time with their grandson and catch up!

I must say though, as much as I love Thanksgiving, I’m happy its over, because NOW comes all the incredible and heavenly desserts and treats!For example, these scrumptious Eggnog Sugar Cookie Bars! I looove sugar cookies! I know there are so many fancy schmancy holiday cookies and treats out there, and don’t get me wrong, I loooove those too, but sugar cookies are in my top three favorite cookie. I loved this idea of making them into bars when I kept seeing it all over Pinterest! It cuts down the prep time by half! So easy!

My other absolute favorite flavor of the holidays is eggnog. I love it. Ive been drinking it this year since the day it showed up in stores in early November. I go through it like its water…that creamy goodness is liquid gold to me. So I thought, why  not combine two of my favorite things and turn them into one fabulous dessert? The eggnog in these bars is purrrfect…its just the right amount without being overwhelming, but not SO subtle that you don’t know its there.

The eggnog turned these sugar cookie bars into a wonderful, festive, delicious treat! I highly recommend them, and they’re so easy! Happy Monday!

Eggnog Sugar Cookie Bars

Prep Time: 10 minutes

Cook Time: 18 minutes

Total Time: 30 minutes

Yield: 16 Bars

Eggnog Sugar Cookie Bars

Ingredients

    For the Cookies
  • 1/2 cup unsalted butter, softened
  • 1 cup white sugar
  • 1 egg
  • 4 Tablespoons eggnog
  • 1 Tablespoon spiced rum (optional)
  • 1 teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • 3 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • For the Frosting
  • 1/2 cup butter, softened
  • 1/4 cup + 1 Tablespoon eggnog
  • 1 teaspoon spiced rum (optional)
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon vanilla
  • 4 cups powdered sugar
  • Food coloring (optional)

Directions

  1. Preheat the oven to 375 degrees.
  2. In the bowl of your stand mixer, fitted with the paddle attachment, combine the butter and sugar. Cream until fluffy
  3. Add the egg and mix well
  4. Add in the eggnog, rum, vanilla extract, and nutmeg. Mix well.
  5. Sift in the flour, baking powder, and salt. Mix until just combined
  6. Line a 9x13 inch baking dish with parchment paper, slightly hanging over the edges.
  7. Push the dough down into the pan so that it evenly covers the whole thing.
  8. Bake 17-20 minutes, until cooked through
  9. While the bars are in the oven, make the frosting by mixing all the ingredients together. Set aside.
  10. Remove the bars from the oven, allow to cool in pan for five minutes before lifting by the parchment paper and transferring to a cooling rack.
  11. Cool completely before frosting.
  12. Cut into squares and serve!
